Apple Puree
Apple puree is the finely sieved flesh of Malus domestica, produced by heating and screening milled apple so that the whole edible fraction including the pulp is retained, in contrast with apple juice, from which the solids are removed.
Its functional behaviour comes from the cell wall material that stays in the product. Apple parenchyma cells carry pectin, cellulose and hemicellulose, and once the fruit has been heated to inactivate pectin methylesterase and polygalacturonase, that pectin remains largely intact and holds water, giving the puree its body and its resistance to serum separation. Soluble solids in single strength puree run at roughly 11 to 13 degrees Brix with malic acid as the dominant acid and a pH near 3.5, which places the product firmly in the acid food range and does much of the preservation work. Concentrated puree at around 28 to 32 degrees Brix is the common traded form because it halves the freight.
It ships in aseptic bags in drums and bins, in cans, in chilled totes and frozen. Colour is the property most at risk in handling, since polyphenol oxidase browns cut apple within minutes, so the interval between milling and the first heat step is short and is often run under steam or with ascorbic acid added.

Common Markets Grades
The trade separates natural puree, containing nothing but apple, from sweetened puree with added sugar and from puree with added ascorbic acid or citric acid for colour and pH control. Single strength and concentrated grades are quoted separately, the concentrate specified by Brix, and both are offered in cloudy form only, since a clarified apple product is a juice rather than a puree.
Variety and blend define quality within those categories. Culinary varieties of the Bramley type give a sharper, higher acid puree that breaks down completely on cooking, while dessert varieties give a sweeter, milder product. Colour is a grading criterion in its own right, with light grades made from peeled or steam treated fruit under tight oxidation control and standard grades carrying a deeper straw colour. Organic certified puree is a substantial separate line. Baby food grade puree is the most demanding grade in the category, produced to tighter limits for patulin, pesticide residues and heavy metals and audited against a customer specific protocol.

Regulatory Status
Apple puree is a food rather than a food additive, so it carries no E number of its own. In the European Union Directive 2001/112/EC as amended defines fruit purée and concentrated fruit purée, and sets out what may be sold under each name, which treatments it allows and what may be added. Regulation 852/2004 and the general food law govern manufacture. In the United States the product is a conventional food made under the preventive controls rules at 21 CFR Part 117. Because it sits below pH 4.6 it is an acid food, so the low acid canned food registration requirements do not apply, although the thermal process is still established and documented.
Patulin is the defining contaminant for this commodity. Maximum levels for patulin in apple products, with a tighter level for products intended for infants and young children, are set in Commission Regulation (EU) 2023/915, and the United States applies an action level for patulin in apple juice and apple juice products, with control resting on fruit sorting rather than on any process step. Regulation 396/2005 sets pesticide residue limits in the European Union, and 40 CFR Part 180 sets tolerances in the United States. Where the puree is destined for infant food, the far stricter compositional and contaminant provisions of Regulation 2006/125/EC on processed cereal based foods and baby foods and its successors apply to the finished food and are passed back to the ingredient by specification. Codex maintains a standard for certain canned fruits and a general standard for contaminants which cover patulin.
Manufacturing Process
Apples are tipped into a flume, washed, and sorted to remove rotten and mouldy fruit. That step carries direct food safety weight, because patulin in the finished puree is produced by Penicillium expansum in rotten tissue and cannot be removed later. Fruit may be destemmed, decored and in some plants peeled, then it is milled to a coarse mash. The mash is heated immediately, usually by steam injection or in a tubular heater, both to inactivate polyphenol oxidase before browning develops and to soften the tissue so that it passes the screens.
The hot mash is passed through a pulper and then one or more finishers with progressively finer screens, which retain skin, seed, core and coarse fibre and let the fine pulp through. The puree is deaerated under vacuum, then concentrated where required in a multi effect evaporator under vacuum at low temperature, which limits colour development. Ascorbic acid, citric acid or sugar is dosed at this stage if the grade calls for it. The product is pasteurised or sterilised in a tubular or scraped surface heat exchanger, held for the scheduled time, cooled, and filled either aseptically into presterilised bags in drums, hot into cans or jars followed by inversion and cooling, or chilled and frozen for frozen grades.
