Bisdisulfide, properly known as bis(2-methyl-3-furyl) disulfide, is a pale yellow to amber liquid aroma chemical with the formula C₁₀H₁₀O₂S₂ and CAS number 28588-75-2. It carries an intensely meaty roasted profile that is widely regarded as the most potent cooked-meat character impact ingredient in commercial flavour work.
It is the oxidative dimer of 2-methyl-3-furanthiol and is dosed at parts-per-billion levels in finished food. Even at this dilution it delivers an unmistakable beef-broth signature with persistent depth.

The standard commercial grade is 97 percent minimum assay by gas chromatography, packed in amber glass under nitrogen.
Pre-diluted solutions at 0.1 percent, 1 percent, and 10 percent in triacetin, propylene glycol, or refined vegetable oil are routinely stocked, since the neat material is too potent to weigh accurately at flavour-bench scale.
FCC and FEMA GRAS conforming material is the routine specification. Kosher and Halal certifications exist on request.

Bisdisulfide is approved as a flavouring substance in the major regulated markets.
It carries FEMA GRAS number 3259 in the Flavour and Extract Manufacturers Association inventory.
The European Union lists it in the Union list of flavourings as FL number 15.020, permitted for general flavour use under good manufacturing practice.
The U.S. Food and Drug Administration recognises it as a synthetic flavouring substance under 21 CFR 172.515. JECFA has reviewed the furan-disulfide flavouring group and concluded no safety concern at the very low use levels typical of this ingredient.

Manufacturing Process
Bisdisulfide is produced by controlled oxidative coupling of 2-methyl-3-furanthiol.
The standard route bubbles air or oxygen through a solution of 2-methyl-3-furanthiol in an inert solvent in the presence of a mild oxidant such as hydrogen peroxide, iodine, or a copper or iron catalyst. The two free thiols couple cleanly through the sulphur atoms to form the symmetrical disulfide bond.
Process conditions are tightly controlled to avoid over-oxidation, which can yield thiosulfinate or thiosulfonate byproducts and degrade the aroma profile.
Crude product is purified by short-path vacuum distillation, then filtered and packed under nitrogen in amber containers. The disulfide is more storage-stable than the parent thiol, but it should still be protected from sustained heat and light.
