Boletus Edulis Extract
Boletus edulis extract is a concentrate prepared from the fruiting body of Boletus edulis, the porcini or cep, an ectomycorrhizal mushroom of the Boletaceae family collected from wild forest stands across Europe, China and North America. The species cannot be cultivated commercially because it depends on a living tree partner, so the raw material is entirely wild harvested and its supply and price follow the season.
Two properties carry the ingredient. The first is flavour: the dried mushroom is exceptionally rich in free glutamic acid and in 5' nucleotides, principally guanosine monophosphate, which act synergistically to produce a deep savoury effect, alongside the sulphur and pyrazine volatiles that give porcini its distinctive earthy aroma. The second is the polysaccharide fraction, beta glucans of the fungal cell wall, which is the basis of its use as a nutritional ingredient rather than a flavour.
The extract is a light brown to brown powder with a strong mushroom odour and a pronounced umami taste. Water extracts dissolve almost completely, giving a brown solution, while high beta glucan grades disperse rather than dissolve because the glucan fraction is only partly soluble. The material is hygroscopic and its aroma volatiles are lost on prolonged exposure to air and heat, so it is packed sealed and used in the later stages of a process.

Common Markets Grades
The trade divides on what the extract is bought for. Flavour grades are hot water extracts specified on total solids and on nitrogen or free amino acid content, sometimes with a declared glutamic acid figure, and are traded alongside dried mushroom powder and mushroom concentrate paste. Nutritional grades are quoted on polysaccharides by the phenol sulphuric acid method, commonly at 10, 20 or 30 percent, or on beta glucan by a specific enzymatic assay, and the two figures are distinct and not interchangeable.
Ratio extracts at 4:1, 8:1 and 10:1 are traded where neither marker is the point. Powders are sold carrier free or on maltodextrin, at 80 mesh, with granulated versions for seasoning blends. Because wild porcini is expensive and other boletes and cultivated species are visually indistinguishable once dried and milled, species authenticity is the main commercial risk, and buyers verify it by DNA barcoding or by chromatographic fingerprint rather than by appearance. Organic certification is available for wild collection from certified forest areas.

Regulatory Status
In the United States, Boletus edulis is an edible mushroom and its water extracts are foods used under the general provisions of the Federal Food, Drug and Cosmetic Act, with supplement products manufactured under 21 CFR Part 111. Mushroom and mushroom mycelium preparations are also recognised as flavouring materials by the Flavour and Extract Manufacturers Association where they are used at flavour level. Wild harvested material is subject to the general adulteration provisions, and species identity is the practical control point because misidentification in wild collection carries a real safety consequence.
In the European Union Boletus edulis is a food with a long history of consumption, so conventional dried mushroom and water extract preparations are not novel foods, while extracts concentrated to an unusual composition or made by unfamiliar processes fall within the novel food regulation. The extract is not a food additive, so no E number applies, and it is declared by name on the ingredient list. Wild fungi are subject to the Union controls on radioactive caesium in mushrooms following historical contamination of forest ecosystems, and consignments are commonly tested for it alongside heavy metals, since boletes accumulate cadmium and mercury from forest soils. Codex has no commodity standard for mushroom extract, and JECFA has issued no additive specification for it.
Manufacturing Process
Wild collected fruiting bodies are cleaned of forest debris, trimmed, sliced and dried in warm air, which both stabilises the material and develops the aroma compounds that are largely absent from the fresh mushroom. Dried slices are graded and milled to a coarse powder. Extraction is by hot water in a counter current or multi stage batch system for flavour and polysaccharide grades, held at a temperature high enough to solubilise the beta glucans but controlled to limit the loss of volatile aroma.
The liquor is separated from the spent mushroom by pressing and decanting, screened and clarified by filtration or centrifugation. For flavour grades the clarified liquor is concentrated under vacuum to a paste or taken directly to spray drying with a carrier. For polysaccharide grades the concentrate is treated with ethanol to a high final concentration, which precipitates the glucan fraction while sugars, amino acids and small molecules stay in solution, and the precipitate is separated by centrifugation, redissolved and dried. Ethanol is recovered by distillation. The dried powder is milled, sieved, blended to assay and packed in foil laminate bags inside fibre drums.
