In the United States there is no generally recognised as safe listing covering bovine myocardial peptide as such. Hydrolysates of edible tissue from cattle slaughtered under federal inspection are handled as food ingredients on safety that the manufacturer establishes, and supplement presentations fall under the dietary supplement framework. Because the raw material is bovine, the specified risk material controls apply, excluding central nervous tissue from the food supply and restricting sourcing by the transmissible spongiform encephalopathy status of the country of origin. Manufacturing Process

Cattle heart is received chilled or frozen from an establishment under veterinary inspection and trimmed of pericardium, valve tissue, major vessels and adherent fat. The trimmed muscle is minced and washed to remove blood and residual lipid, since haem pigment darkens the finished powder and fat oxidises to a rancid note over shelf life. The mince is slurried in water and brought to the temperature and pH window of the enzyme system.

Hydrolysis is run with a food grade protease, in practice an alkaline endoprotease taken to a defined degree of hydrolysis and then an exopeptidase stage that trims the bitter hydrophobic fragments generated in the first step. The enzymes are inactivated by heating, and the hydrolysate is centrifuged and filtered to remove undigested residue and separated fat. Ultrafiltration holds back high molecular weight material and the enzyme itself, nanofiltration concentrates the peptide permeate and removes part of the salt load, and activated carbon and, on higher grades, ion exchange resin strip colour and odour. The purified concentrate is evaporated under vacuum and either spray dried or frozen and freeze dried, then milled, sieved, metal checked and packed with a moisture barrier.
