Caramel Sauce

Caramel sauce is a pourable confection made by cooking sugar until it caramelises and then stopping the cook with a liquid, usually cream, milk or water, along with butter or vegetable fat and salt. Industrial versions add glucose syrup, milk solids and a hydrocolloid to control texture and to keep the sauce stable in storage.

Two distinct chemistries produce the flavour, and formulations differ in how much they lean on each. Caramelisation is the thermal breakdown of sugar alone above about 160 degrees Celsius, which gives the bitter, burnt-sugar notes. Maillard reaction between the reducing sugars and the milk protein gives the rounder, butterscotch and dulce de leche character, and it runs at lower temperatures, which is why dairy caramels can be cooked more gently. Glucose syrup is included not for sweetness but to interfere with sucrose crystallisation, since a caramel that crystallises turns grainy.

The sauce is a viscous, glossy, amber to dark brown liquid, thinning when warmed and setting to a soft body on cooling. Preservation rests on soluble solids, generally 68 to 78 degrees Brix, and on the corresponding low water activity rather than on acidity, so caramel is a low acid product and thermal processing or preservative is needed where an ambient shelf life is required. Pails, drums and aseptic bag-in-box are the trade packs, and the sauce is pumped warm.

Common Markets Grades

The main distinction is thermal behaviour. Bake-stable caramel is formulated at high solids with a starch or gum system so it does not boil out of a filled pastry or run off a tart during baking, while pouring and topping grades are thinner and are added after baking. Freeze-thaw stable grades resist the syneresis that separates a caramel after frozen storage, and ripple grades for ice cream are formulated to stay soft and scoopable at freezer temperature rather than setting hard.

Composition separates dairy caramels, built on cream, butter or sweetened condensed milk, from non-dairy versions using vegetable fat and plant protein, which are made both for cost and for vegan lines. Salted caramel is a distinct commercial line at a raised salt level. Colour and flavour intensity range from pale blond through amber to dark, and lower cost formulations reach the darker shades with caramel colour and caramel flavouring rather than by cooking the sugar further, which is a meaningful difference on the label.

Regulatory Status

Caramel sauce has no standard of identity in the United States and is labelled under the general food labelling rules with a full ingredient declaration. Milk is a declarable allergen in dairy formulations, and where caramel colour is used to reach the target shade it is an additive in its own right and must be declared separately from the caramelised sugar that gives the flavour. Because caramel is a low acid food, an ambient shelf-stable product either relies on its low water activity, supported by data, or on thermal processing, and that choice decides which manufacturing rules apply.

In the European Union the product falls under general food law and the food information regulation. Regulation (EC) No 1333/2008 authorises caramel colours as E 150a to E 150d, each with its own specification, and the ammonia and sulphite ammonia classes carry limits on reaction by-products in the purity criteria. Any stabiliser, emulsifier or preservative used must likewise be authorised for the food category and declared. Codex has no vertical standard for caramel sauce, so composition is a matter of buyer specification.

Manufacturing Process

Sugar and glucose syrup are dissolved in water and brought to the boil in a jacketed or vacuum kettle, or on a continuous line in a scraped surface heat exchanger. The batch is cooked to the target colour, which is the practical control point rather than time or temperature alone, and colour is measured inline or by drawn sample. Where a dairy caramel is being made, sweetened condensed milk or cream is often added early so that Maillard reaction proceeds alongside caramelisation, which develops the rounded flavour and avoids the sharp bitterness of a pure sugar cook.

Fat, salt and the hydrocolloid system are added toward the end of the cook, and the batch is evaporated to the target soluble solids under vacuum, which allows the water to be removed without pushing the colour further. The hot sauce is homogenised so that the fat is finely dispersed and will not separate on standing, then either filled hot above 85 degrees Celsius into pails and drums and cooled in a tunnel, or heat treated through a holding tube and filled cold into presterilised aseptic bags. Filled containers rest before palletising so that the body sets consistently.
