Celery Seed Extract

Celery seed extract is prepared from the small brown fruits of Apium graveolens, botanically a schizocarp rather than a true seed, and is traded both as a flavour material and as a standardised supplement ingredient. The seed carries two commercially distinct fractions that are recovered by different processes.

The volatile fraction, obtained by steam distillation or carbon dioxide extraction, is dominated by limonene and beta-selinene with the phthalides sedanolide, sedanenolide and butylphthalide, and it is these phthalides that give celery its characteristic aroma even though they make up only a small share of the oil. The non-volatile fraction, obtained by solvent extraction, carries flavonoids led by apigenin and its glycoside apiin, together with furanocoumarins and the phthalide dimers that supplement grades are standardised on.

Powdered extract is a light brown to tan hygroscopic solid with a strong celery odour, partly water dispersible depending on the carrier used. The phthalides are volatile and light sensitive, so extracts lose aroma if stored warm or in permeable packaging, and oleoresin grades are held cold under nitrogen.

Common Markets Grades

Three product types are traded and should not be confused. Celery seed essential oil is a steam distilled volatile oil specified on limonene and total phthalide content. Celery seed oleoresin is a solvent extract combining volatile oil with the fixed oil and non-volatile constituents, quoted on volatile oil content in millilitres per hundred grams. Standardised celery seed extract for supplements is a dried powder assayed on 3-n-butylphthalide or on total phthalides, commonly 85 percent phthalide grades made by carbon dioxide extraction, or on apigenin content.

Alongside these, milled seed powder and ratio extracts such as 4 to 1 and 10 to 1 are sold. Dispersible and encapsulated forms are used for dry seasoning blends, where the oleoresin is plated onto salt, dextrose or silica. Furanocoumarin content is worth specifying for topical and high-dose applications, since celery is a known source of photosensitising psoralens. Organic certified seed and extracts are available.

Regulatory Status

In the United States, 21 CFR 182.10 and 182.20 list celery seed, its oil and its oleoresin among the spices, essential oils, oleoresins and natural extractives that are generally recognised as safe for their intended use in food, and celery seed oil carries a FEMA GRAS number as a flavouring substance. Concentrated extracts sold as supplements are handled as dietary ingredients. The controlling labelling obligation is allergen declaration: celery is not a major allergen under United States law but is a recognised sensitiser, and exporters must account for its status elsewhere.

In the European Union celery seed preparations are flavourings obtained from a food source and are handled under the flavourings regulation without individual authorisation. Celery has no E number. The obligation that matters is allergen labelling, since celery and products of celery are on the list of allergens that must be emphasised in the ingredient list, which applies at any level of inclusion and catches seasoning blends containing celery oleoresin. Codex has adopted a standard for dried celery seed as a spice, covering identity, moisture and defect tolerances, and the general Codex provisions on contaminants and hygiene apply.

Manufacturing Process

Cleaned seed is graded and destoned, then processed by one of three routes. For essential oil the seed is coarsely crushed and steam distilled for several hours, the vapour condensed and the oil separated from the aqueous distillate by density, then dried and filtered. For oleoresin the ground seed is percolated with hexane, ethanol or acetone in a countercurrent extractor, and the miscella is desolventised under vacuum at the lowest workable temperature, leaving a viscous dark green to brown oleoresin; the volatile oil is often distilled off first and added back to a standard strength so that each lot matches.

Supplement grades are usually made by supercritical carbon dioxide extraction, in which liquefied carbon dioxide at controlled pressure and temperature selectively removes the phthalides and fixed oil without heat and without solvent residue, and the extract is released by dropping the pressure in a separator vessel. The resulting oil is standardised on phthalide assay and either filled into softgels or adsorbed onto a carrier and spray dried into a powder. Powdered grades are sieved, tested for furanocoumarins where the specification requires it, and packed under nitrogen away from light.
