Collagen Casing is a tubular sausage casing manufactured from purified bovine corium, the dense middle layer of beef hide that is rich in type I collagen fibres.

The casing divides into two main families. Edible collagen casings are thin-walled and tender enough to be consumed with the cooked sausage. Inedible collagen casings are thicker, often shirred and reinforced, and are stripped from the product after cooking and smoking.

Common Markets Grades

Edible grades are sized by caliber, expressed in millimeters of stuffed diameter, with common sizes ranging from 17 mm for snack sticks and breakfast links up to 32 mm for fresh dinner sausages and frankfurters.

Inedible grades cover larger calibers, typically 40 mm and above, and are used as substitutes for natural beef middles and fibrous casings in salami, summer sausage, and large-format cooked products.

Three formats cover the trade: shirred strands ready for stuffing on automatic equipment, flat rolls for manual operations, and pre-tied loops and links for specialty applications.

Colour, smoke permeability, and shrink performance are tuned by plasticizer and cross-linking chemistry. Caramel-tinted, smoke-permeable, and easy-peel grades each cover a defined production category.

Regulatory Status

Collagen casing is an accepted food-contact and food-component material in major regulated markets. In the United States FDA food-additive practice recognises it for casing applications, and USDA-FSIS oversees it in meat-processing facilities.

In the European Union, casings made from animal collagen fall under the rules governing products of animal origin, with raw-material traceability and TSE controls applied to bovine sources.

Casings sold as edible are subject to compositional and migration controls. Inedible casings carry labelling requirements that distinguish them from edible products at the consumer level.

Halal and Kosher certifications exist for casings produced from species-segregated raw material and dedicated processing lines.

Manufacturing Process

Production starts with selection of the corium layer of beef hide, separated from the grain and flesh sides during the hide-splitting step at a tannery or dedicated collagen plant.

The corium is cleaned, defatted, and subjected to controlled alkaline and acidic treatments to remove non-collagen proteins and to swell the fibres. The swollen material is mechanically ground into a smooth collagen dough.

This dough is mixed with plasticizers, typically glycerol, and with cellulose fibres in inedible grades to add wet strength. The blend is extruded through annular dies into thin-walled tubes.

The wet tubes pass through a coagulation bath that precipitates the collagen and a series of conditioning baths that adjust pH and cross-linking. Smoke-permeability and colour are set in this stage.

The tubes are then dried under controlled tension, cut, shirred onto sticks, and packaged. Inedible grades may receive an additional reinforcement step before shirring.
