Crystalline Fructose

Crystalline Fructose is the high-purity solid form of D-fructose, specified at 99.5 percent or higher fructose on a dry basis. The molecule is the same ketohexose as standard fructose, but with much tighter limits on residual glucose, oligosaccharides, ash, and moisture.

The product appears as a free-flowing white crystalline powder with a clean, intense sweetness. Its relative sweetness is roughly 1.7 times that of sucrose in cold dilute solution, with the advantage narrowing at higher concentrations and warmer temperatures.

Standard crystalline grade specifies 99.5 percent minimum fructose, with residual glucose typically below 0.5 percent and oligosaccharides below 0.5 percent. Loss on drying is held below 0.5 percent and ash below 0.05 percent.

Pharmaceutical grade meets the additional requirements of USP-NF, Ph. Eur., or JP monographs for fructose, including limits on heavy metals, hydroxymethylfurfural, and microbial counts. Some suppliers offer parenteral grade with endotoxin specifications for use in infusion solutions.

Particle size grades range from fine milled powder for direct blending into beverage and instant-drink premixes, through medium crystal for tabletop and dry-mix formats, to coarse granular for direct-compression tableting. The product is hygroscopic and is normally packaged in moisture-barrier liners.

Regulatory Status

Crystalline Fructose is treated as a nutritive sweetener rather than a food additive.

The European Union covers it under general sugar legislation, with the Ph. Eur. monograph for fructose setting analytical limits for pharmaceutical use. There is no E number assignment.

The U.S. Food and Drug Administration recognises crystalline fructose as GRAS, originally affirmed under 21 CFR 184.1866 and supported by an industry GRAS notification covering the high-purity crystalline form specifically.

JECFA has not established a numerical intake limit. Pharmacopoeial-grade material is produced under cGMP and is widely available in halal, kosher, vegan, and non-GMO certified versions depending on the starch source.

Manufacturing Process

Crystalline Fructose is produced by enrichment and crystallisation of enzyme-isomerised glucose syrup.

Refined dextrose is first isomerised over immobilized glucose isomerase to give an equilibrium liquor containing about 42 percent fructose. This liquor is then enriched on simulated moving-bed chromatography columns operated in calcium-form cation exchange, lifting fructose content above 90 percent.

The enriched stream is decolorised with activated carbon, demineralized through mixed-bed ion exchange, and concentrated under vacuum. The high-purity, low-colour liquor is fed to a crystallisation train where controlled cooling and seeding drive growth of large, uniform fructose crystals.

The crystals are separated by centrifugation, washed to remove residual mother liquor, and dried in fluid-bed dryers. The dried product is screened to specified particle-size cuts, and mother liquor returns to chromatography for additional fructose recovery.
