Dehydrated Ginger Flakes are sliced rhizomes of Zingiber officinale that have been dried to a stable moisture and sold as flat, irregular pieces with visible fibre structure.

The flake format gives quicker rehydration than whole splits and keeps a recognizable visual identity that powder cannot offer. Typical slice dimensions are 5 to 15 mm in length with a thickness of 1 to 3 mm.

Ginger flakes are sorted by slice size, peeling, and colour.

Decorticated flakes are made from peeled rhizomes and show a uniform pale yellow colour. Unpeeled flakes carry the brown surface skin and are favored where rustic appearance or higher fibre content is welcome.

Slice dimension is usually specified as a size range with a maximum percentage of broken pieces and fines. Premium grades show less than 2 percent fines and minimal scorched edges.

Specifications cover residual moisture (typically 10 percent maximum), volatile oil (1.5 percent minimum is a common floor), gingerol content for nutraceutical grades, and microbiological limits. Steam-sterilised options are standard for ready-to-eat applications.

The U.S. FDA classifies dried ginger as GRAS for use as a spice and natural flavouring. The American Spice Trade Association cleanliness specifications cover insect fragments and foreign material.

For herbal tea and supplement use, the European Pharmacopoeia monograph on Zingiberis rhizoma sets identity, purity, and gingerol assay tests. Organic, Kosher, and Halal certifications are widely offered.

Manufacturing Process

Mature ginger rhizomes are washed to remove field soil, then trimmed of fibrous roots and growing tips. Peeling is done mechanically or chemically depending on the target grade.

Peeled rhizomes are sliced perpendicular to the fibre axis to expose the inner tissue. Slice thickness controls both drying time and the final mouthfeel of the rehydrated flake.

Slices are spread on perforated trays and dried in multi-zone tunnel dryers. Inlet temperatures are kept at 50 to 55 C to avoid burning the volatile oil. Later zones step up modestly to drive off bound water and finish the product below the moisture threshold for microbial stability.

Drying time runs 6 to 12 hours depending on slice thickness. Longer drying converts more gingerol to shogaol, giving a hotter but less aromatic flake. Processors targeting tea applications dry shorter and cooler to preserve the citrus and floral top notes.

After drying the flakes are cooled, sieved to remove fines, optically sorted, and packed in moisture-barrier bags. Modified atmosphere packaging is used for premium tea grades to protect aroma.
