Delta-Decalactone is a colourless to pale yellow oily liquid with a creamy, buttery, coconut-like aroma carrying a soft peach undertone.
The compound has the molecular formula C₁₀H₁₈O₂ and CAS number 705-86-2. It is a six-membered lactone formed by intramolecular esterification of 5-hydroxydecanoic acid, and it is one of the most important dairy-creamy character molecules in the flavour industry.

Common Markets Grades
Delta-Decalactone trades in three grades: a nature-identical synthetic, a fermentation-derived natural, and a 99 percent quality for fine fragrance work.
The nature-identical synthetic grade assays at a minimum of 98 percent and meets the Food Chemicals Codex monograph. Specifications include acid value, refractive index, and colour in APHA units.
A natural grade produced by fermentation runs at a minimum 97 percent assay and carries a natural label under U.S. and EU flavour regulations. The natural grade is generally a defined enantiomeric mixture that matches the form found in milk fat.
A premium 99 percent grade with tight colour specifications is produced for fine fragrance and high-end dairy flavour compositions.

Regulatory Status
Delta-Decalactone is accepted as a flavouring substance worldwide.
FEMA has assigned GRAS number 2361 for use as a flavour in food. The U.S. Food and Drug Administration permits both synthetic and natural forms, with the natural form qualifying under 21 CFR 101.22 and the synthetic form under 21 CFR 172.515.
The European Food Safety Authority evaluated the molecule within flavouring group FGE.10 and concluded that no safety concern arises at typical dietary exposure. It carries FL number 10.014 in the Union list of flavourings.
JECFA reviewed the lactone group and raised no objection at current use levels. The Council of Europe lists the substance under number 227.
Japan and Korea permit the substance under their respective flavour regulations. Reference material is produced from major analytical-standards suppliers.
Manufacturing Process
Two industrial routes account for nearly all global supply.
The synthetic route starts from 2-decenoic acid or from 1-decene. Hydration places a hydroxyl at the C5 position, and the resulting 5-hydroxydecanoic acid cyclizes spontaneously on distillation to give the six-membered delta-lactone. The product is racemic.
The dominant modern route is microbial fermentation. Selected strains of Yarrowia lipolytica, Mortierella alpina, and other lipid-metabolizing microorganisms are fed coconut or palm-kernel oil hydrolysates. The microbes carry out partial beta-oxidation to produce 5-hydroxydecanoic acid as an intermediate, which lactonizes to delta-decalactone. The product is recovered by solvent extraction or steam distillation.
The fermentation route produces an enantiomeric mixture similar to that found in nature and qualifies as natural under U.S. and EU flavour regulations.
Major producers include IFF, Robertet, Symrise, BASF, and several Chinese fermentation specialists. As with gamma-decalactone, the natural fermentation grade has become the volume leader on the back of natural-flavour demand.
