Edible Inks
Edible inks are formulated liquid or paste colour systems designed to be printed onto the surface of food and pharmaceutical products. They are compound preparations rather than single substances: a colourant, a carrier solvent that is almost always water or a water and alcohol mixture, a humectant such as glycerol or propylene glycol to stop the nozzle drying, a binder or film former, and minor additions of surfactant, buffer and preservative to control surface tension, pH and shelf life.
The colourant chosen determines the ink type. Dye based inks use water soluble colours and print as transparent, well defined images, and they are the standard for inkjet printing where any suspended particle would block a nozzle. Pigment based inks use lakes, vegetable carbon or titanium dioxide dispersed to a fine and stable particle size, and they give opaque coverage on dark or coloured substrates, at the cost of needing continuous agitation and a printhead tolerant of particles.
The physical specification is as important as the colour. An ink must sit inside a narrow viscosity and surface tension window for the printing method it serves, must dry on the substrate without cracking or bleeding, and must not attack the surface it lands on. Inks are therefore sold by printing technology, thermal or piezo inkjet, pad printing, screen printing or offset, rather than by colour alone.

Common Markets Grades
Grades divide first by printing technology and second by colourant type. Inkjet inks are low viscosity, typically a few millipascal seconds, filtered to remove any particle that could block a nozzle, and packed in sealed cartridges or bulk bottles for refillable systems. Pad and screen printing inks are much more viscous pastes, often built on a shellac or modified starch binder, and are used for direct printing on tablets, capsules and hard confectionery. Offset and flexographic inks for printed icing sheets and wafer paper form a third family.
Within each, dye based and pigment based versions are offered in the process colours, cyan, magenta, yellow and black, plus spot shades made to a reference. White inks are pigment based and rely on titanium dioxide, so their availability follows its regulatory status in the destination market. Formulations are further split by substrate: inks for sugar sheets and icing paper, for chocolate and compound coatings, for tablet film coats, and for direct printing on baked surfaces, each adjusted for wetting and drying on that surface.

Regulatory Status
An edible ink has no status of its own; it is regulated through its components. Every colourant in it must be authorised for the food or pharmaceutical application in the destination market, which in the United States means a certified colour listed in 21 CFR Part 74 or an exempt colour listed in Part 73, and in the European Union means an authorised colour with an E number under Regulation (EC) No 1333/2008 used within its permitted categories. The carriers, humectants and preservatives must likewise be permitted additives or food ingredients at the levels used, and glycerol, propylene glycol and shellac are all handled under their own additive provisions.
Two market differences change formulation directly. Titanium dioxide, the only practical white pigment, is no longer authorised as a food additive in the European Union following the European Food Safety Authority opinion that a safe level could not be established, while it remains a listed colour additive in the United States, so white and opaque inks are not portable between the two markets. Vegetable carbon is authorised as E 153 in the European Union but has no colour additive listing in the United States, which affects black inks in the opposite direction. Suppliers should provide a full component declaration with the regulatory status of each colourant stated for the intended market.
Manufacturing Process
Manufacture is a formulation and dispersion operation rather than a chemical synthesis. The colourant is bought in as a certified dye or as a lake or pigment dispersion, and the ink maker first prepares the vehicle: purified water, humectant, buffer salts and preservative, mixed under controlled temperature until fully dissolved. Dye based inks are made by dissolving the dye into this vehicle under agitation, adjusting pH and surface tension with buffer and surfactant, then filtering through progressively finer cartridges, commonly down to sub-micron, so that nothing remains that could block a printhead.
Pigment based inks require a dispersion step instead. The pigment is wetted into the vehicle with a dispersing agent and passed through a bead mill or high pressure homogeniser until the particle size distribution is narrow and stable, which is what prevents settling and nozzle blockage in service. Binder and film former are added afterwards to avoid breaking the dispersion. Both types are then checked for viscosity, surface tension, pH, colour strength against a reference and print performance on the target substrate, degassed, and filled into cartridges or bottles under hygienic conditions. Batches are held under quarantine until the print test and microbiological results are released.
