Fructose Syrup

Fructose Syrup is a high-purity liquid sweetener in which D-fructose is the dominant carbohydrate, typically present at 80 percent or more of dry substance. This positions it above the F42 and F55 grades of high-fructose corn syrup, both in fructose content and in functional sweetness.

The product is a clear, near-colourless liquid with a clean, intense sweetness profile. Its high fructose share gives strong cold-temperature sweetness, good moisture retention, and effective freezing-point depression relative to sucrose at equal solids.

Common Markets Grades

Fructose Syrup is graded by fructose content on a dry basis.

The most common commercial grade is F80, containing roughly 80 to 85 percent fructose with the balance as glucose and a small fraction of oligosaccharides. Higher grades at 90 percent fructose and above are also available, often marketed as ultra-high-fructose syrup.

Dry-solids content is normally 77 to 80 percent, set high enough to suppress microbial growth without preservatives but low enough to keep fructose in solution at standard storage temperatures. The syrup is held warm during shipment and storage to prevent crystallisation and colour drift.

The product is decolorised with activated carbon and demineralized through ion exchange, giving low ash and low hydroxymethylfurfural specifications. Pharmaceutical-grade fructose syrup meets the relevant pharmacopoeial fructose monographs in liquid form.

Regulatory Status

Fructose Syrup is treated as a nutritive sweetener in most jurisdictions.

In the European Union it falls under general sugar legislation rather than additive law, with no E number assignment. Labelling typically declares it as fructose syrup or fructose-glucose syrup depending on composition and national requirements.

The U.S. Food and Drug Administration recognises high-fructose corn syrup and related fructose-rich liquids as GRAS under 21 CFR 184.1866. JECFA has not established a numerical intake limit.

Pharmacopoeial-grade material is produced for syrup formulation under USP-NF and Ph. Eur. fructose monographs. Halal, kosher, vegan, and non-GMO certifications are widely available depending on the starch source.

Manufacturing Process

Fructose Syrup is produced by chromatographic enrichment of enzyme-isomerised glucose syrup.

Refined dextrose, derived from starch saccharification, is converted over immobilized glucose isomerase to give an equilibrium liquor containing about 42 percent fructose. This is the same base stream from which F42 and F55 HFCS grades are made.

To reach 80 percent or higher fructose, the liquor is enriched on simulated moving-bed chromatography columns operated in calcium form. The chromatographic step relies on the stronger affinity of fructose for the calcium-loaded resin, separating it from glucose at industrial scale.

The enriched fructose stream is decolorised with activated carbon, demineralized through mixed-bed ion exchange, and evaporated to 77 to 80 percent dry solids. The finished syrup is stored in heated tanks to prevent fructose crystallisation and is shipped in insulated tankers or heated totes.
