The term glacial refers to its tendency to crystallise into ice-like solids when temperatures fall below 16.6 degrees Celsius. In this concentrated form the liquid is a clear, mobile, hygroscopic acid with a pungent, characteristic vinegar odour.
It is the universal commercial form of acetic acid, serving as the upstream feedstock for vinyl acetate monomer, acetic anhydride, terephthalic acid, and a long list of acetate esters, while also functioning as a direct acidulant and preservative when diluted.

Glacial Acetic Acid comes in a range of grades distinguished by purity, colour, and trace-impurity specification.
Technical grade at minimum 99.5 percent assay is the standard material for chemical synthesis, solvent service, and textile and dyeing applications. Colour is controlled below 20 on the Pt-Co scale and water below 0.5 percent.
Food grade at minimum 99.85 percent assay meets the Food Chemicals Codex monograph, with permanganate reduction time above 30 minutes and tightened limits on iron, heavy metals, and aldehydes. This grade is used in vinegar manufacture, pickling, and direct food acidulation.
Pharmaceutical grade conforms to USP, BP, and Ph. Eur. monographs for acetic acid and is used as an excipient in hemodialysis concentrates, topical antiseptics, and pharmaceutical synthesis.
Dilute commercial forms at 80 percent, 70 percent, 50 percent, and 30 percent are produced by dilution with deionized or process water. These solutions remain liquid at low ambient temperatures and are favored for safer handling in pickling, cleaning, and metal-finishing service.

Regulatory Status
Acetic acid is one of the most widely permitted acidulants and preservatives in the world.
In the European Union it carries the E number E260, and Regulation (EC) No 1333/2008 approves it at quantum satis in most food categories, with parallel approvals for sodium, potassium, calcium, and ammonium acetates as E261 through E264.
The U.S. Food and Drug Administration recognises acetic acid as Generally Recognized as Safe under 21 CFR 184.1005 for use as a flavouring agent, pH control agent, and preservative, and lists it among permitted food-contact substances.
JECFA has evaluated acetic acid and concluded that an acceptable daily intake need not be specified, citing the molecule's natural occurrence in foods and complete metabolism through the citric acid cycle.
Monographs appear in the United States Pharmacopeia, the European Pharmacopoeia, the British Pharmacopoeia, the Japanese Pharmacopoeia, and the Food Chemicals Codex. Halal and Kosher certifications are routinely available for synthetic material.
Industrial classifications place glacial acetic acid in UN class 8 (corrosive) for transport, with mandatory labelling above 80 percent concentration in most jurisdictions.
Manufacturing Process
Methanol carbonylation accounts for the majority of global glacial acetic acid output.
Methanol and carbon monoxide react in the liquid phase over a rhodium (Monsanto) or iridium (Cativa) catalyst, promoted by methyl iodide. Reaction conditions are around 150 to 200 degrees Celsius and 3 to 6 MPa, with selectivity to acetic acid above 99 percent on methanol.
The reactor effluent is flashed to recover catalyst, then sent to a multistage distillation train that strips light ends (methyl iodide, methyl acetate, water) and then dehydrates the acid to glacial concentration. A guard column removes residual iodides to part-per-billion levels for downstream chemical use.
Secondary routes include the catalytic oxidation of acetaldehyde, the liquid-phase oxidation of n-butane or naphtha, and bacterial fermentation of ethanol to vinegar followed by distillation. Fermentation-route material is now of interest for renewable-carbon and bio-based labelling.
