Green Pepper Essential Oil is the steam-distilled volatile oil of immature, freshly harvested fruits of Piper nigrum Linnaeus, picked before the fruits begin to ripen and turn red.
The oil is a clear to pale green liquid with a fresh, herbaceous, sharply peppery aroma. Its character is built on monoterpenes (α-pinene, β-pinene, sabinene, 3-carene) and the sesquiterpenes β-caryophyllene and limonene, without the heavy resinous depth of black pepper oil.

Green Pepper Essential Oil is graded by source country and by whether the starting material was fresh, brined, or freeze-dried green peppercorns.
Madagascan and Sri Lankan oils are considered the reference quality and carry a clean, almost minty top note.
Indian oil from the Western Ghats covers larger volumes and is generally spicier and more terpene-forward.
Indonesian green pepper oil from Lampung sits between the two in character.
Specialty grades include CO₂-extracted green pepper oil, which captures a fuller aromatic profile including non-volatile piperine traces, and water-distilled grades preferred for fine fragrance work.

Regulatory Status
Green Pepper Essential Oil is recognised as a natural flavouring substance across major jurisdictions.
The FDA lists black pepper and its essential oil as GRAS under 21 CFR 182.20, and the same listing covers green pepper oil derived from Piper nigrum.
The EU permits it as a natural flavouring under Regulation (EC) 1334/2008, FL number 14.013.
JECFA has reviewed the principal monoterpene and sesquiterpene constituents and raised no safety concerns at typical flavour-use levels.
IFRA does not currently restrict the oil in fragrance applications, although standard allergen declarations for limonene apply when present above thresholds. Kosher, Halal, and organic certifications exist from major suppliers.
Manufacturing Process
Green peppercorns are harvested 4 to 6 months after flowering, while the fruits are still firm and green.
Harvested fruits are either distilled fresh on-farm within hours of picking, or preserved by brining or freeze-drying for later distillation at central facilities.
Fresh distillation gives the brightest, cleanest profile.
Steam distillation runs 4 to 6 hours in stainless-steel stills. Yields are 1.5 to 3.5 percent of fresh fruit weight, varying with cultivar and harvest timing.
The crude oil is decanted, dried over anhydrous sodium sulphate, and stored cold under nitrogen because the monoterpene-rich profile is prone to oxidation.
Premium grades are often rectified gently under vacuum to remove the heaviest sesquiterpenes and standardise the green top note.
