Guar Gum

Guar Gum is a galactomannan polysaccharide extracted from the seed endosperm of the legume Cyamopsis tetragonoloba, which is cultivated primarily on the dry plains of Rajasthan and Gujarat in northwest India.

The polymer has a mannose backbone with galactose side chains at roughly a 2:1 mannose-to-galactose ratio. The high degree of substitution keeps the molecule soluble in cold water and gives it the highest cold-viscosity-per-cost of all commercial gums.

Guar Gum is graded by viscosity, particle size, and end-use approval.

Food-grade guar runs from low-viscosity (around 2,000 cP at 1 percent) for clear beverages up to ultra-high-viscosity (above 6,000 cP) for ice cream and bakery use. Mesh sizes typically range from 60 to 200.

Pharmaceutical-grade guar meets USP and Ph. Eur. monographs with tighter limits on protein, ash, and microbial load. It is produced for tablet binding and dietary-fibre supplements.

Partially hydrolysed guar (PHGG) is a fully soluble fibre form sold for clear beverages and clinical nutrition.

Oilfield-grade guar dominates global volume and is split into fast-hydrating and slow-hydrating variants for hydraulic fracturing fluids.

Regulatory Status

Guar Gum is approved as a food additive in essentially every regulated market.

Regulation (EC) No 1333/2008 lists it as E412 in the European Union, and it is GRAS in the United States at 21 CFR 184.1339. JECFA assigned the additive an acceptable daily intake not specified.

USP and Ph. Eur. monographs cover pharmaceutical guar. Halal, Kosher, vegan, non-GMO, and gluten-free certifications are routinely offered.

Manufacturing Process

The dried guar seed has three layers: a tough hull, a hard endosperm, and a yellow germ. The hull is removed by mechanical splitting, and the germ is separated from the endosperm halves, known as guar splits.

The splits are the trade form between Indian processors and global gum manufacturers. They are flaked, double-ground in stages, and air-classified to remove residual germ and hull fragments.

For food and pharma grades, the splits are slurried in water-isopropanol, treated to inactivate native enzymes, then dried and milled. This polishing step removes off-odours and stabilises viscosity over shelf life.

Partially hydrolysed guar is made by controlled enzymatic depolymerisation followed by spray drying.
