Ice-cream Flavour
Ice cream flavour is a compound flavouring formulated specifically for frozen dessert, where low temperature, high fat and incorporated air change how aroma is perceived. It is a blend rather than a single substance, built from flavouring substances, natural extracts and a carrier chosen to survive freezing, and it is sold by profile: vanilla, milk and cream, chocolate, fruit, nut and confectionery types.
The formulation problem it solves is release. At serving temperature of around minus fifteen degrees the vapour pressure of most aroma compounds is low, so a flavour dosed to taste correct at room temperature reads as flat once frozen. Fat adds to the effect by binding lipophilic compounds in the fat globule, and overrun dilutes the matrix with air. Flavours for this application are therefore dosed higher than in ambient products and are weighted toward compounds that release from a cold fat continuous system, with more polar and volatile constituents carrying the top note.
Physical forms are water soluble liquids in propylene glycol or ethanol, oil soluble liquids, emulsions for cloudy fruit types, pastes carrying real fruit or nut solids, and spray dried powders for dry mix applications. Liquid grades dominate because they disperse in the mix before ageing and freezing.

Common Markets Grades
The main commercial division is by carrier and solubility. Water soluble liquid grades are metered into the pasteurised mix and are the default for dairy, vanilla and confectionery profiles. Oil soluble grades are used where the flavour must sit in the fat phase, particularly for nut and chocolate directions. Emulsion grades carry both a flavour and a clouding function and suit fruit sorbets and water ices. Paste grades contain visible fruit, nut or cocoa solids and are dosed at percent levels rather than at fractions of a percent.
Within each carrier, grades are quoted as a dosage rate rather than an assay, commonly expressed as grams per hundred kilograms of mix, and are separated into natural, natural with other natural flavouring, and nature identical compositions according to how the constituents were obtained. Heat stable grades are specified for mixes that receive a high temperature pasteurisation, and allergen free variants avoiding dairy, nut and gluten derived carriers are traded for plant based frozen desserts.

Regulatory Status
Ice cream flavour is regulated as a flavouring, not as a food additive, so it carries no E number of its own. In the European Union every flavouring substance in the blend must appear on the Union list of authorised flavouring substances, and the labelling terms natural flavour and natural flavour of a named food may be used only where the composition satisfies the definitions in the flavourings framework. Carriers and solvents used in the blend are themselves regulated as additives and must be declared where they carry through to the finished dessert.
In the United States the individual flavouring substances are cleared as generally recognised as safe, mostly through the FEMA GRAS programme, and the labelling distinction between natural and artificial flavour is set by federal food labelling rules. Vanilla flavoured frozen desserts are additionally subject to standard of identity provisions that govern how vanilla content is described. Codex evaluates flavouring substances individually through JECFA and maintains a standard for edible ices that covers the additives permitted in the finished product.
Manufacturing Process
Compounding begins with weighing the flavouring substances, essential oils, extracts and any reaction or fermentation derived bases against a master formula, normally on a stepped weighing system so that materials dosed at parts per thousand are added through a premix rather than directly. The weighed materials are dissolved into the carrier, propylene glycol, ethanol, triacetin or a refined vegetable oil, in a jacketed stainless vessel under slow agitation, with heat kept low because the volatile top note fraction is the part most easily lost.
Emulsion grades take an additional step, in which the oil phase is dispersed into a gum or modified starch stabilised water phase and passed through a high pressure homogeniser to a droplet size fine enough to resist creaming through frozen storage. Powder grades are emulsified with maltodextrin or modified starch and spray dried, then optionally agglomerated in a fluid bed for dispersion. All grades are filtered, checked against a retained standard by a trained sensory panel and by gas chromatography, then filled into lined drums or lacquered pails under nitrogen.
