Magnesium Chloride is an inorganic magnesium salt with the formula MgCl₂, typically sold as the hexahydrate MgCl₂·6H₂O in the form of colourless flakes, prills, or a clear concentrated brine.
The salt is highly soluble in water, mildly hygroscopic, and delivers a sharp, slightly bitter mineral taste. It functions across three distinct industries: food, where it coagulates soy protein into tofu, infrastructure, where it manages ice and dust on roads, and nutrition, where it serves as a bioavailable source of elemental magnesium.

Common Markets Grades
Magnesium Chloride is graded by purity and by hydration state.
Food grade hexahydrate flake is the standard format for tofu manufacturing and for use as a firming agent. In Japan it is sold under the traditional name nigari, often made directly from seawater bittern after sodium chloride removal.
USP and Ph. Eur. pharmaceutical grade hexahydrate is the format used for oral supplements, topical magnesium oil concentrates, and intravenous electrolyte solutions, with controlled limits on sulphate, bromide, ammonium, and heavy metals.
Technical grade anhydrous MgCl₂ is produced for the electrolytic production of magnesium metal and as a Lewis-acid catalyst.
De-icing and dust-control grades go out as 28 to 35 percent aqueous brine or as 47 percent prills, with looser specifications on insolubles and colour.

Magnesium Chloride is approved for food use in essentially every regulated market.
In the European Union it carries the additive number E511, with quantum satis authorisation as a firming agent and stabiliser.
The U.S. Food and Drug Administration recognises the substance as GRAS under 21 CFR 184.1426, with specific listings as a firming agent, flavour enhancer, nutrient, and processing aid.
JECFA has reviewed magnesium salts as a group and assigned them acceptable status for use as food additives.
Pharmacopoeial monographs for the hexahydrate appear in the United States Pharmacopeia (USP), the European Pharmacopoeia (Ph. Eur.), and the Japanese Pharmacopoeia (JP). Halal and Kosher certification is routine for both the seawater-derived and synthetic grades.
Manufacturing Process
Three industrial sources account for almost all commercial supply.
The dominant route is concentration of natural brines from seawater, salt lakes, and underground reservoirs. The Dead Sea, Great Salt Lake, China's Qaidam Basin, and bittern liquor left over from solar sea-salt operations are the largest single feedstocks. Stepwise evaporation precipitates sodium chloride first, then potash salts, leaving a magnesium-rich end liquor that is crystallised as the hexahydrate.
The carnallite route processes the natural mineral KMgCl₃·6H₂O, dissolving and selectively crystallising potassium chloride, then recovering magnesium chloride hexahydrate from the mother liquor.
The synthetic route reacts magnesium oxide or magnesium hydroxide with hydrochloric acid, followed by evaporation and crystallisation. This is the route most often used for pharmacopoeial grades, since starting-material purity can be tightly controlled.
Anhydrous MgCl₂ is produced by dehydrating the hexahydrate under a dry hydrogen chloride atmosphere, which prevents the hydrolysis to magnesium oxychloride that would otherwise occur on simple heating.
