Two hydrate states of Calcium Lactate reach the market.
The pentahydrate (Ca(C₃H₅O₃)₂·5H₂O) is the most common commercial form. It is a white, free-flowing crystalline powder used for direct food fortification, dough conditioning, and pharmaceutical tablet formulation. Standard mesh sizes range from fine powder to coarse granular.
The anhydrous form is preferred where moisture sensitivity, higher calcium loading per unit weight, or compatibility with hygroscopic blends is required. Both forms are produced from L(+)-lactic acid and from racemic DL-lactic acid feedstocks, with the L(+) form preferred for infant nutrition.
Food Chemicals Codex, USP, BP, EP, and JP-grade material is widely available, with low-microbial and Kosher/Halal-certified variants on request.

Regulatory Status
Calcium Lactate is approved as a food, supplement, and pharmaceutical ingredient in essentially all regulated markets.
In the European Union it is listed as food additive E327, permitted as an acidity regulator, firming agent, raising agent, sequestrant, and flavour enhancer. It is also approved as a calcium source for food supplements and for foods for specific nutritional uses including infant formula.
The U.S. Food and Drug Administration affirms it as GRAS under 21 CFR 184.1207 for general food use. Pharmacopoeial monographs appear in USP-NF, Ph. Eur., BP, and JP.
L(+)-Calcium Lactate is the form specified for infant formula and follow-on formula in most jurisdictions. Kosher and Halal certifications are routinely available, since the lactic acid feedstock is produced by carbohydrate fermentation.
Manufacturing Process
Calcium Lactate is produced by neutralisation of lactic acid with a calcium source.
Industrial lactic acid is obtained predominantly by microbial fermentation of glucose, sucrose, or starch hydrolysates using Lactobacillus species. Strain selection determines whether the product is L(+), D(−), or racemic DL-lactic acid. Most food and pharmaceutical applications today specify the L(+) form for metabolic compatibility.
The fermentation broth is clarified, then neutralised with calcium carbonate or calcium hydroxide slurry. Calcium Lactate crystallises from the cooled mother liquor and is recovered by centrifugation, washed, and dried at controlled temperature to preserve the desired hydrate state.
Pharmaceutical and infant-nutrition grades require additional purification including activated carbon decolorisation, ion-exchange polishing, and recrystallisation to meet pharmacopoeial limits on heavy metals and microbial load.
