Myocardial active peptide, freeze dried, is a lyophilised powder of short peptides obtained by enzymatic hydrolysis of animal heart muscle, in practice porcine or bovine heart recovered as edible offal, dried from the frozen state under vacuum rather than in hot air.
Heart is a distinctive hydrolysis feedstock because it is continuously working muscle. Its tissue is dense in mitochondria and therefore carries an unusually high content of coenzyme Q10, carnitine and taurine, together with myoglobin, and its protein is largely contractile actin and myosin rather than the collagen that dominates hide and bone. The hydrolysate accordingly shows a broad amino acid profile with a high content of the branched chain residues typical of muscle protein, and carries those small mitochondrial cofactors through with it, which is the basis on which it is sold as an active rather than a plain peptide.
Freeze drying is chosen precisely because those cofactors and the associated colour are heat sensitive. The powder is pale brown to reddish brown, porous and low in bulk density, with a savoury meaty odour. It dissolves almost immediately in water because sublimation drying leaves an open cake, and the same structure makes it hygroscopic, so it is packed under nitrogen in foil and handled in a conditioned room.

Species and traceability form the first distinction: porcine heart is the volume feedstock, and bovine heart is used where a non porcine origin is specified, with species identification testing normally part of the certificate because organ by-products are readily substituted in trade. Molecular weight is the second axis: general grades hold most of the peptide mass below 3000 Daltons, while ultrafiltered oligopeptide grades take the greater part below 1000 Daltons.

Manufacturing Process
Chilled or frozen heart from an approved abattoir is trimmed of the pericardium, valves, large vessels and adhering fat, then split and washed repeatedly to flush the chambers of residual blood, since retained blood drives both colour and odour in the finished powder. The cleaned muscle is minced with water into a pumpable slurry and heated briefly to inactivate tissue enzymes and reduce the microbial load, then cooled to the working temperature of the protease system.
Hydrolysis runs in a stirred reactor at controlled pH, generally with a bacterial endoprotease to cleave the myofibrillar protein followed by an exopeptidase preparation to trim the hydrophobic terminal residues that carry bitterness, and is stopped by heat once the target degree of hydrolysis is reached. The digest is centrifuged to remove undigested tissue and to separate the fat layer, then ultrafiltered at a few kiloDaltons to hold back residual whole protein. Where the grade calls for a lighter colour, a limited activated carbon treatment is applied, though this is kept minimal because carbon also strips the lipophilic cofactors the product is sold for. The permeate is concentrated at low temperature under vacuum, filled into trays, frozen solid, and dried in a lyophiliser where the ice sublimes directly to vapour. The dried cake is milled, sieved and packed at once under nitrogen.
