Pork Flavour
Pork flavour is a compounded savoury flavouring that reproduces boiled, roast or braised pork character in a finished food. Industrial grades are thermal process flavourings, in which the aroma is generated by heating a reaction mixture rather than assembled from aroma chemicals alone.
The chemistry follows the same outline as other meat flavours but reaches a different destination. Maillard condensation between cysteine, thiamine and reducing sugars produces the sulphur heterocycles that give the meat character, above all 2-methyl-3-furanthiol and its disulphide. What identifies the result as pork is the lipid contribution, since pork fat is rich in specific unsaturated fatty acids whose thermal degradation yields the gamma and delta lactones and unsaturated aldehydes responsible for the sweet, fatty, slightly nutty character of cooked pork. Lard is therefore built into the reaction rather than added afterwards.
Three forms reach the market: a viscous brown paste, an oil-soluble liquid in lard or a vegetable oil carrier, and a spray-dried powder. Because much of the character sits in the fat phase, powder grades lose more on drying than chicken or beef equivalents and are usually reinforced with a topping flavour.

Common Markets Grades
Grades separate by form, by profile and by raw material origin. Reaction pastes carry the fullest body and go into wet systems, spray-dried powders serve dry seasoning blends, and oil-soluble liquids are made for seasoning oil sachets and frying. Profiles for boiled pork, roast pork, braised pork belly, bacon and crackling are formulated separately and are not interchangeable.
Raw material origin matters more in this category than in any other meat flavour, because pork is excluded by several religious dietary systems. Grades built on lard, pork extract or hydrolysed pork protein contain genuine porcine material and are normally produced on segregated lines with clear allergen and species declarations, and cannot carry halal or kosher certification. Pork-profile flavours built entirely on hydrolysed vegetable protein, yeast extract and vegetable fat contain no porcine material, are certifiable, and are sold to markets where the meat itself is not permitted or where a plant-based declaration is required. Species testing by PCR is a routine part of the release specification for both types.

Regulatory Status
In the United States the flavouring substances used are covered by the FEMA GRAS programme, while hydrolysed proteins, yeast extract and lard are ordinary food ingredients. Products containing pork-derived material fall under USDA Food Safety and Inspection Service jurisdiction rather than the FDA, requiring an inspected establishment operating a HACCP plan and label approval. Hydrolysed protein is declared by source, and natural against artificial flavour labelling follows 21 CFR 101.22.
In the European Union thermal process flavourings are a defined category under Regulation (EC) No 1334/2008, which sets out the permitted starting materials and the temperature and time conditions of manufacture and sets limits for certain substances that may form during heating. Such flavourings carry no E number. Grades containing porcine material are products of animal origin under the food hygiene package, so the establishment must be approved and imports must carry health certification. Where acid-hydrolysed vegetable protein is used, 3-MCPD and its esters are controlled by alkaline treatment of the hydrolysate and monitored on release. Species declaration is a legal requirement in most markets, and undeclared porcine material is treated as an adulteration issue rather than a labelling technicality.
Manufacturing Process
The reaction substrate is prepared first, either by acid or enzymatic hydrolysis of vegetable protein and yeast, or by enzymatic digestion of pork trimmings and bone extract where a meat-containing grade is being made. The liquor is neutralised, clarified and standardised on amino nitrogen, then charged into a jacketed reactor together with reducing sugars, cysteine hydrochloride, thiamine and rendered lard or a vegetable fat.
The batch is adjusted to a mildly acid pH and heated under agitation, generally between 95 and 120 degrees Celsius for thirty minutes to two hours, while Maillard reaction and lipid degradation proceed together and the colour darkens. It is cooled rapidly to fix the profile, then blended with salt, carriers and topping flavours. Paste grades are filled and chilled, while powder grades are diluted, homogenised with maltodextrin or modified starch, spray dried in a tower and agglomerated where a free-flowing granule is wanted. Every batch is released against a retained reference on sensory panel and gas chromatography, and lines running porcine material are cleaned and verified before any non-porcine batch is produced.
