Powdered Lecithin

Powdered Lecithin is a fine, free-flowing dry form of phospholipid emulsifier produced by deoiling and milling fluid lecithin. It carries the European food additive number E322 and is intended for dry-blend operations where the addition of any liquid oil phase is undesirable.

The material holds phospholipid content above 95 percent on an oil-free basis. Phosphatidylcholine typically falls between 22 and 30 percent depending on source, with phosphatidylethanolamine and phosphatidylinositol making up the balance.

Powdered Lecithin is graded by source, particle size, and phospholipid fractionation.

Standard soy and sunflower powders pass through a 100 mesh screen and serve general bakery and beverage premix use. Fine powders below 200 mesh are produced for capsule, tablet, and infant nutrition applications.

Fractionated grades concentrate specific phospholipids. Phosphatidylcholine-enriched powders reach 30 to 50 percent purity for nutraceutical use, and phosphatidylserine-enriched powders are produced for cognitive supplement formulas.

Instantized powders carry a small fraction of edible carrier coating that improves cold-water dispersibility for ready-to-mix beverage and dietetic powder applications.

Regulatory Status

Powdered Lecithin shares the regulatory status of its parent fluid lecithin under the additive number E322 in the European Union.

The United States Food and Drug Administration treats lecithin as Generally Recognized as Safe under 21 CFR 184.1400. JECFA reviewed lecithins as a class and concluded that a numerical intake limit was not required.

The Food Chemicals Codex monograph for lecithin covers deoiled powder grades, with composition tests for acetone-insoluble content, acid value, and moisture.

Source allergen labelling follows the parent oilseed. Soy-derived powders require soy declarations in most major markets, while sunflower-derived powders do not. Kosher, Halal, non-GMO, and organic certifications are widely available.

Manufacturing Process

Powdered Lecithin is produced from fluid lecithin through a deoiling, drying, and milling sequence.

Standard fluid lecithin is mixed with cold acetone in a stirred reactor to dissolve the residual triglycerides. The phospholipid fraction precipitates as a sticky paste while the acetone-oil layer is decanted and recycled.

The deoiled paste is dried under vacuum to a moisture level below 1.5 percent, then crushed and milled in an air-classifier mill under inert atmosphere. Particle size is controlled by mill speed and classifier setting to hit the target mesh range.

Selected lines now use supercritical carbon dioxide for the deoiling step, which removes residual solvent concerns and produces a powder with cleaner sensory properties. Fractionated grades are produced by additional alcohol extraction or chromatographic separation of specific phospholipid classes.
