Manufacturing Process
Pumpkin Seed Protein production begins with hulled or partially hulled pumpkin seeds. Naked-seed cultivars such as Styrian pumpkin remain a preferred raw material because no dehulling is needed.
The seeds are cleaned, optionally roasted at low temperature for flavour development, and pressed mechanically to remove most of the oil.
The defatted press cake, holding 35 to 50 percent protein, is the starting point for further protein concentration.
For the concentrate grade, the cake is milled, sieved, and standardised. For higher-protein isolates, water or mild alkaline extraction is followed by isoelectric precipitation near pH 4.5, washing, neutralisation, and spray-drying.
Raw and cold-pressed grades skip thermal steps wherever possible and rely on mechanical separation and low-temperature drying.
