Typical protein content runs from 60 to 80 percent on the finished crisp. The format mirrors soy protein crisps, but with the allergen-friendly profile of rice.

Common Markets Grades
Rice Protein Crisps are graded by protein content, particle size, and colour.
The mainstream bar grade is 60 percent protein, sized 2 to 4 millimeters, which gives the right snap and visible inclusion in a finished bar.
Higher protein grades at 70 and 80 percent are produced for premium bar lines and for clinical nutrition bars where protein density is critical.
Particle size variants include 1 to 2 millimeter fines for cereal flakes and coating dusts, and 4 to 6 millimeter pieces for visible chunks in granola.
Coloured and flavoured grades are produced for specific bar concepts: cocoa, vanilla, and toasted variants. Organic and non-GMO grades are widely available.

In the United States the constituent ingredients (rice protein, rice starch, minor additives) are Generally Recognized as Safe. The finished crisp does not require premarket approval.
In the European Union the product is treated as a standard food ingredient and does not require Novel Food authorisation, as the ingredients and the extrusion process have a long history of use.
Allergen labelling depends on the additives used. The rice base itself does not trigger allergen disclosure in the major markets.
Kosher, Halal, vegan, and gluten-free certifications are routinely available when the formulation is built without barley malt or other gluten sources.
Manufacturing Process
Rice Protein Crisps are produced by twin-screw extrusion of a dry blend of rice protein, rice starch, and minor additives.
The dry blend is metered into a twin-screw extruder. Water is injected to bring moisture to 15 to 20 percent. Mechanical shear and barrel heating drive temperatures to 120 to 160 degrees Celsius for a short residence time.
The dough emerges through a die under pressure. Rapid pressure drop flashes off moisture, expanding the matrix into a porous structure. A face-mounted rotating knife cuts the extrudate into pellets, which are then dried in a fluid-bed dryer to below 5 percent moisture.
The crisp texture depends on careful balance between protein and starch. Too much protein gives a hard, dense piece. Too much starch gives a fragile crisp that crumbles in a bar matrix.
Optional coating steps add cocoa, sugar, or flavour compounds for differentiated end products.
