Sulfurol

Sulfurol is a sulphur-nitrogen heterocyclic flavour compound that delivers savory, meaty, and toasted notes. CAS 137-00-8.

The chemical name is 5-(2-hydroxyethyl)-4-methylthiazole (commonly written as 4-methyl-5-(beta-hydroxyethyl)thiazole). Formula C₆H₉NOS, molar mass 143.21 g/mol. The material is a pale yellow to amber viscous liquid.

The standard specification is 98 percent minimum by GC, with low residual thiazoline and water content. The product is packed in lined steel drums or HDPE pails under nitrogen.

Colour drift to a deeper amber on storage is normal and does not affect performance. Cold, dark storage is recommended to extend shelf life beyond 24 months.

Kosher and Halal certification is widely available. The compound is also sold as a vitamin B1 (thiamine) synthesis intermediate at pharmaceutical grade.

Regulatory Status

Sulfurol is approved as a flavouring substance in major markets.

It carries FEMA GRAS number 3204 and FLAVIS number 15.020. The European Union has it on the Union list of authorised flavourings.

The U.S. Food and Drug Administration recognises it as a synthetic flavouring substance under 21 CFR 172.515. JECFA has evaluated the sulphur-containing heterocyclic flavour group and placed sulfurol in a class of no safety concern at current intake.

As a pharmacopoeial intermediate to thiamine, the compound also appears in pharmaceutical regulatory frameworks under separate quality monographs.

Manufacturing Process

Sulfurol is manufactured by ring synthesis of the thiazole core.

The classical route, developed during the early thiamine synthesis programs, condenses chloroacetone or related α-halo ketones with a thioamide derived from acrylonitrile or β-hydroxyethyl thioamide. Ring closure under controlled conditions gives the thiazole with the methyl and hydroxyethyl substituents in place.

An alternative route builds the heterocycle from 3-chloro-5-hydroxypentan-2-one and thioformamide. Both routes are operated by Asian and European specialty manufacturers, primarily to supply the thiamine industry, with a separate purification stream serving flavour use.

Final purification is by short-path distillation under high vacuum, since the compound is heat sensitive at atmospheric pressure.
