Tara Gum

Tara Gum is a galactomannan extracted from the seed endosperm of Caesalpinia spinosa, a small leguminous tree native to the Andean valleys of Peru. It sits between guar and locust bean gum in mannose-to-galactose ratio, at roughly 3:1.

This intermediate substitution gives tara partial cold solubility and full hot solubility, along with the ability to participate in xanthan and carrageenan synergies similar to locust bean gum.

Tara Gum comes in two grades, food and pharmaceutical.

Standard food grade runs at 3,000 to 5,500 cP at 1 percent solution and is the standard grade for dairy and confectionery use. Premium clarified grades serve clear beverage and dessert applications.

Pharmaceutical grade meets monograph specifications for protein, ash, and microbial counts and is used in oral suspensions and tablet binders.

Organic-certified tara is widely available, since most Peruvian harvest comes from wild stands or low-input plantations.

Regulatory Status

Tara Gum is approved as a food additive across the major regulated markets.

Regulation (EC) No 1333/2008 lists it as E417 in the European Union, and it is GRAS in the United States at 21 CFR 184.1685. JECFA has reviewed tara and assigned ADI not specified.

Organic, Kosher, Halal, vegan, non-GMO, and gluten-free certifications are routinely available. Peruvian export controls ensure traceability to the harvest cooperative.

Manufacturing Process

Tara pods are harvested from wild and cultivated trees in the highlands of Peru, primarily in the regions of Ayacucho, Cajamarca, and Apurimac.

The pods are split to recover the seeds. The seeds are then dehulled and the germ separated from the endosperm, yielding tara splits as the trade intermediate.

Splits are flaked, milled in stages, and air-classified. Premium grades are further polished with water-isopropanol washing to remove off-flavours and protein residues.

Yield is moderate. One tonne of pods gives around 250 kg of seed and 80 to 100 kg of gum, better than carob but below guar.
