Turmeric
Turmeric is the dried, ground rhizome of Curcuma longa, a perennial herb of the ginger family cultivated primarily in South and Southeast Asia. The finished spice is a fine, bright yellow-orange powder with a warm, slightly bitter, earthy aroma.
It carries 2 to 6 percent curcuminoids and 2 to 7 percent volatile essential oil, dominated by turmerones, alongside starch, fibre, and protein from the intact rhizome matrix. Turmeric serves simultaneously as a culinary spice, a natural colour, and a traditional botanical ingredient.

Common Markets Grades
Turmeric is traded in several physical and quality grades.
Whole dried fingers and bulbs are the raw form, bought for downstream grinding, oleoresin extraction, or sale into traditional retail markets. Polished fingers have had the outer scaly skin removed for visual appeal.
Ground turmeric powder is graded by mesh size, typically 60, 80, or 100 mesh, and by curcuminoid content, with culinary grades commonly assayed at 2 to 4 percent and premium culinary grades at 5 to 6 percent.
Origin-specific grades carry distinct flavour and colour profiles. Indian Alleppey turmeric, principally from Kerala, is bought for its deep colour and higher curcuminoid level. Madras turmeric is lighter in colour but more aromatic.
Organic-certified and steam-sterilised grades are widely available for export markets that require microbiological control without ethylene oxide treatment.

Regulatory Status
Turmeric is recognised as a food ingredient and a colour in essentially all major regulatory systems.
The U.S. Food and Drug Administration lists ground turmeric as Generally Recognized as Safe for use as a spice and natural seasoning, and as a colour additive exempt from certification under 21 CFR 73.600 for general food use.
In the European Union, turmeric used purely as a spice counts as a food, while turmeric extracts used for colour fall under E100 in Regulation (EC) No 1333/2008. JECFA has evaluated turmeric and curcumin and assigned acceptable status for use as colours.
The European Spice Association has published technical specifications covering moisture, ash, curcuminoid content, and microbiology, which serve as an industry baseline in practice.
Turmeric appears in the United States Pharmacopeia, the European Pharmacopoeia, and the Ayurvedic Pharmacopoeia of India. Organic, Kosher, Halal, and Fair Trade certifications are widely available from major suppliers.
Manufacturing Process
Turmeric cultivation is concentrated in India, which accounts for roughly 75 to 80 percent of world output. Other producers include Bangladesh, Myanmar, Thailand, Indonesia, Sri Lanka, Vietnam, Nigeria, and Peru.
The crop is planted in rows from rhizome seed pieces at the onset of the monsoon and harvested 7 to 10 months later when the leaves yellow and dry. Harvested rhizomes are washed to remove soil, then boiled or steamed for 30 to 60 minutes. This curing step gelatinizes starch, evens out colour, and reduces drying time.
The boiled rhizomes are sun-dried or mechanically dried over 10 to 15 days to a moisture content below 10 percent. Polishing in rotating drums removes the rough outer skin and gives the characteristic glossy yellow surface.
For powder, the dried fingers are pin-milled, sieved, and blended to a target colour and curcuminoid specification. Steam sterilisation is increasingly applied to meet European Union and Japanese microbiological limits without chemical fumigation.
