Wheat Gluten
Wheat Gluten is the dried protein fraction extracted from wheat flour by water washing.
The ingredient consists primarily of the storage proteins gliadin and glutenin, which together form the elastic viscoelastic network responsible for bread dough strength. Commercial wheat gluten carries a protein content of about 75 to 80 percent on the dry basis.

Common Markets Grades
Three grades of Wheat Gluten reach the market: food, feed, and industrial.
Food grade is the dominant commercial product, sold as a fine cream coloured powder under the common name vital wheat gluten. Vitality refers to the preservation of the protein's ability to hydrate and form a cohesive dough on rewetting.
Feed grade is similar in composition but processed under looser tolerances on colour and microbiological quality.
Industrial grade is processed for non food uses such as adhesives, biofilms, and pet food binders. Modified gluten products including deamidated and partially hydrolysed grades extend the functional range into emulsion and foam stabilisation.

Regulatory Status
Wheat Gluten is regulated as an ordinary food ingredient in major markets.
It is not subject to specific food additive numbers but is required to be declared on the ingredient list of finished products.
Wheat and gluten are recognised priority allergens in the European Union, the United States, Canada, Australia, and most other jurisdictions. Foods containing wheat gluten must carry clear allergen labelling.
Specifications for vital wheat gluten appear in the FAO/WHO Codex Alimentarius standard for wheat gluten products, which sets minimum protein content and quality parameters.
Manufacturing Process
Wheat Gluten is produced by water washing of wheat flour or wheat dough.
In the most common process, wheat flour is mixed with water to form a stiff dough. The dough is then washed under a stream of water that carries away starch granules, soluble proteins, and minor components.
What remains is the insoluble gluten network, a cohesive elastic mass of hydrated gliadin and glutenin. This wet gluten is rapidly dried in flash or ring dryers at temperatures that preserve the protein's ability to rehydrate.
The dried product is milled to a fine powder. The starch slurry recovered from the washing step is a coproduct of equal commercial value and supports the broader wheat starch industry.
