Wheat Starch is the carbohydrate fraction recovered from wheat flour (Triticum aestivum) by water-based separation of the starch granules from the gluten network.
It is typically co-produced with vital wheat gluten in modern starch-gluten plants, making it the only major commercial starch with a high-value protein co-product driving the economics.

The trade divides Wheat Starch into food, pharmaceutical, and industrial grades.
Native food-grade wheat starch contains roughly 25 percent amylose and 75 percent amylopectin, with moisture below 14 percent and characteristic bimodal granule sizes (large A-granules 15 to 35 μm and small B-granules 2 to 10 μm).
Gluten-free certified wheat starch is washed to a residual gluten content below 20 ppm and serves the celiac-friendly bakery and clinical nutrition markets.
Pharmaceutical grade complies with the European Pharmacopoeia, USP, and JP monographs for tablet disintegrant and binder.
Industrial grades cover paper sizing and coating, corrugating adhesive, textile sizing, and gypsum board manufacture.

Regulatory Status
Wheat Starch is a food ingredient rather than a regulated additive. It does not carry an E number when sold in native form.
The U.S. FDA recognises wheat starch as GRAS. Pharmacopoeial monographs in the European Pharmacopoeia, USP, and JP cover pharmaceutical grades.
The European Pharmacopoeia monograph allows wheat starch in pharmaceutical use including products for people with celiac disease when the residual gluten content does not exceed 20 ppm.
Wheat allergen labelling is mandatory under both EU and U.S. rules. Specially processed gluten-free certified material carries the AOECS crossed-grain symbol when audited and certified.
Manufacturing Process
Wheat Starch is recovered alongside vital gluten. Wheat flour is mixed with water to form a stiff dough that develops the gluten network.
In the Martin process the dough is washed continuously with water, releasing the starch granules into a slurry while the gluten matrix is collected as a coherent mass. In the more modern Batter process and high-pressure disintegration variants, a thin batter is mechanically separated by decanter centrifuges that split gluten, A-granules, B-granules, and water-soluble pentosans.
The starch slurry is washed, dewatered, and flash-dried to specification moisture. The gluten phase is washed, dewatered, and flash-dried at low temperature to preserve the viscoelastic functionality that makes vital gluten valuable.
Major production sites operate in northern France, the Benelux, Germany, Australia, and northwest China, generally co-located with large wheat milling pools.
