Acid Stable Konjac Gum is a high-purity konjac glucomannan, above 90 percent glucomannan content, that has been modified to maintain functional viscosity in low-pH beverage and food systems. It is the premium acid-resistant grade in the konjac portfolio.
Unlike the micron-particle variant, acid stable gum runs at standard 80 to 120 mesh and is intended for industrial users with adequate dispersion equipment and longer hydration windows.

Common Markets Grades
Acid Stable Konjac Gum divides into three viscosity classes.
The 28,000 cP grade is the standard for fruit beverage stabilisation and pulp suspension at pH 3.5 to 4.
The 32,000 cP grade serves higher-viscosity applications including acidified dairy and protein drinks.
The 36,000 cP premium grade is used in confectionery jellies and concentrated fruit preparations where maximum gel strength must be retained through acid exposure.
All three grades are produced with stability data showing viscosity retention after accelerated acid-aging tests at pH 3 and 40 °C.

Regulatory Status
Acid Stable Konjac Gum is regulated as a modified konjac gum.
It carries E425 designation in the European Union when reagent residuals conform to additive specifications. The U.S. FDA permits modified konjac under the modified gum framework.
Halal, Kosher, vegan, non-GMO, and gluten-free certifications are routinely available. Mini-cup jelly format restrictions apply where legislated.
Manufacturing Process
Production begins with the premium purified konjac gum at over 90 percent glucomannan.
The gum is reacted with a food-grade cross-linking agent, commonly sodium trimetaphosphate or propylene oxide, under controlled alkaline conditions. The reaction introduces covalent bridges between adjacent polymer chains, reinforcing the network against acid hydrolysis.
After reaction the modified gum is washed in alcohol to remove residual reagent, salts, and reaction by-products, then dried under vacuum to preserve molecular weight.
The dried gum is milled to 80 to 120 mesh and air-classified. Stability is verified by extended hold tests in pH 3 to 4 citric acid solution at elevated temperature.
