Ammonium Glycyrrhizinate is the ammonium salt of glycyrrhizic acid, recognised in the European Union under the food additive code E958 and assigned CAS number 53956-04-0.
The salt form is far more water-soluble than the parent acid, which makes it the standard form of licorice sweetener for confectionery, throat lozenges, and tobacco flavouring across Europe and North America.

Ammonium Glycyrrhizinate is a yellowish to pale brown crystalline powder, typically at 98 percent assay on a dry basis measured by HPLC.
A standard food grade for confectionery and beverage use carries minimum 98 percent purity, sulfated ash below 0.5 percent, and residual ammonia within Codex limits.
A pharmacopoeial grade meeting USP and Ph. Eur. requirements is reserved for throat lozenges, cough syrups, and topical anti-inflammatory preparations.
Reduced-purity grades of 75 to 85 percent are produced for tobacco casing and animal-feed flavouring where full purification is not justified.

Regulatory Status
Ammonium Glycyrrhizinate carries the European food additive number E958, and Regulation (EC) 1333/2008 permits it in confectionery, soft drinks, and herbal infusions at defined use levels.
EFSA reviewed glycyrrhizin and its salts most recently in 2024, reaffirming that habitual intake should remain below the long-standing guidance of 100 mg per day of glycyrrhizin to avoid pseudoaldosteronism (sodium retention, hypertension, and hypokalemia).
In the United States the salt is GRAS under 21 CFR 184.1408 with the same use-level limits as licorice extract.
Pharmacopoeial monographs appear in the United States Pharmacopeia, the European Pharmacopoeia, and the Japanese Pharmacopoeia. Kosher and Halal certifications are routinely available.
Manufacturing Process
Manufacture starts with hot-water or dilute-ammonia extraction of dried licorice roots, principally Glycyrrhiza uralensis and Glycyrrhiza glabra.
The crude extract is acidified with sulphuric acid to precipitate glycyrrhizic acid, which is filtered, washed, and redissolved in dilute aqueous ammonia. Repeated re-precipitation and washing remove tannins, polysaccharides, and pigments.
The purified ammonium salt solution is decolorised with activated carbon, polished by filtration, concentrated under vacuum, and finally spray-dried or crystallised.
Specifications for E958 require careful control of free ammonia, heavy metals, and residual solvents. Each lot is tested by HPLC against a reference standard to confirm assay and isomeric purity.
