Concentrated Goji Berry Juice

Concentrated goji berry juice is the juice of the fruit of Lycium barbarum, the wolfberry, evaporated or membrane concentrated to a high solids liquid that is diluted back before use.

Fresh goji juice is a deep orange red liquid at roughly 12 to 16 Brix, and concentrate is traded most often at 36 to 45 Brix, with clarified grades reaching 65 Brix. The soluble solids are dominated by glucose and fructose, with malic and citric acid supplying an acidity around pH 4.0 to 4.6. Two constituent groups define the material technically. The carotenoid fraction, in which zeaxanthin dipalmitate is the principal pigment, gives the colour and is the reason the concentrate is light sensitive. The polysaccharide fraction, a group of arabinogalactan protein complexes usually reported together as Lycium barbarum polysaccharides, is the marker most often carried on the specification.

The concentrate is water miscible and highly viscous at ambient temperature, so it is warmed before dosing. Colour loss through carotenoid oxidation and Maillard browning driven by the high reducing sugar content are the two ageing routes that limit shelf life, both of which are slowed by frozen storage and low headspace oxygen.

Common Markets Grades

Grades are set first by Brix and by whether the material is clarified or pulp containing. Clarified concentrate, depectinised and filtered, is used in clear drinks and shots. Cloudy concentrate retains suspended solids and carries more carotenoid, so it is preferred where colour and a whole fruit declaration matter. Both are traded frozen in drums or aseptically in bag in box.

A second distinction is the polysaccharide guarantee, commonly expressed as a percentage on the concentrate or on dry matter, which buyers in the supplement trade specify and beverage buyers usually do not. Fruit origin is also specified, since material from the traditional growing areas of northwest China is treated as a separate grade from other production. Organic certified lots, pesticide screened lots for export, and sulphur free declarations are the remaining commercial distinctions, the last of these mattering because sulphited dried berries are common in the wider goji trade.

Regulatory Status

Berries of Lycium barbarum and preparations made from them are treated in the European Union as a food that was consumed within the Union before May 1997, so the Commission has taken the position that they do not require novel food authorisation. Goji products are therefore placed on the market under the general food law and hygiene framework rather than under Regulation 2015/2283. Pesticide residues are the practical regulatory issue for this crop, controlled by the maximum residue levels of Regulation 396/2005, and import lots are subject to increased official controls in some periods.

In the United States goji berry juice is marketed as a conventional food and as a dietary supplement ingredient, with the Food and Drug Administration regulating it under the Federal Food, Drug, and Cosmetic Act rather than under any additive listing. Supplement products fall under the dietary supplement labelling and current good manufacturing practice rules, and health claims are restricted to permitted structure and function statements. No E number applies. Juice processors selling into the United States operate the hazard analysis and critical control point plan required at 21 CFR Part 120.

Manufacturing Process

Ripe berries are harvested, washed and inspected, then either pressed fresh or, where the crop has been dried for storage, rehydrated before extraction. Fresh berries are crushed to a mash and treated with pectinase, because goji pulp is high in pectin and yields poorly on a press without enzymatic breakdown. The mash is pressed on a belt or screw press and the raw juice is screened to remove seeds and skin fragments.

Raw juice is centrifuged and, for clear grades, held for further depectinisation, fined and passed over a diatomaceous earth or crossflow membrane filter. It is then deaerated and concentrated in a falling film vacuum evaporator, frequently after a reverse osmosis pre concentration stage that removes water at ambient temperature and shortens the time the carotenoids spend hot. Evaporator temperature and residence time are the controlling variables for colour retention. The concentrate is pasteurised on a plate exchanger, cooled quickly, and drum frozen or filled aseptically. Spray dried powder is made from the same concentrate with maltodextrin as carrier.
