Flavour and fragrance grade typically assays at 80 percent or higher, with the balance made up of diallyl sulphide, diallyl trisulfide, and other allyl polysulfides naturally present in distilled garlic oil.
Food-grade DADS, sold as a FEMA GRAS flavouring substance, assays at 95 percent or higher by gas chromatography. This grade is the standard input for savory flavour houses.
Research and reference grades at 98 to 99 percent purity are used in pharmacology, biochemistry, and analytical method development.
Distilled garlic oil itself, which contains 40 to 60 percent DADS alongside related polysulfides, is the most economical bulk source for feed and large-volume flavour applications.

Regulatory Status
Diallyl disulfide is recognised as a flavouring substance in the major food law systems.
The Flavour and Extract Manufacturers Association of the United States lists DADS as FEMA GRAS number 2028. The U.S. Food and Drug Administration accepts it as a synthetic flavouring substance under 21 CFR 172.515 for use in food at levels consistent with good manufacturing practice.
The European Food Safety Authority has evaluated DADS as part of flavouring group FGE.08 covering aliphatic and alicyclic mono-, di-, tri-, and polysulfides with or without additional oxygenated functional groups. It is included in the EU positive list of flavouring substances under FL number 12.008.
For feed use, DADS appears in the EU register of feed additives within the sensory additive category for all animal species, and in the U.S. AAFCO framework as a recognised flavouring.
Pharmacopoeial monographs for garlic oil, in which DADS is the dominant component, appear in the European Pharmacopoeia and the United States Pharmacopeia.
Manufacturing Process
Two industrial routes account for nearly all DADS supply.
The dominant route is steam distillation of fresh or dried garlic (Allium sativum). Crushed bulbs are first allowed to react so that alliinase converts alliin to allicin. Heat then drives the rapid decomposition of allicin to a mixture of allyl sulfides, with DADS as the major component. Steam carries the volatile sulfides into a condenser, where the crude garlic oil separates as a heavy fraction. Fractional distillation under reduced pressure recovers DADS at 80 to 95 percent purity.
The synthetic route starts from allyl chloride or allyl mercaptan. Allyl mercaptan is oxidised with iodine, hydrogen peroxide, or sulphur in alkaline medium to give DADS directly. Alternatively, allyl chloride reacts with sodium disulfide to form the symmetric disulfide. The synthetic route gives more consistent purity for flavour and pharmaceutical grades.
The product is stored cool, dark, and under nitrogen, since the disulfide bond is sensitive to oxidation and to disproportionation into mono-, tri-, and tetrasulfides on prolonged storage.
