Egg Yolk Lecithin
Egg Yolk Lecithin is a high-purity phospholipid fraction recovered from chicken egg yolk and refined to pharmaceutical specifications. It carries the European food additive number E322 and represents the original source from which lecithin was first isolated in the nineteenth century.
The material is a pale yellow waxy solid or fluid that holds a phosphatidylcholine content typically above 70 percent. Phosphatidylethanolamine, sphingomyelin, and minor lysophospholipids make up the balance, alongside trace cholesterol and triglycerides.

Food grade material carries a phosphatidylcholine fraction of 40 to 70 percent and serves bakery, mayonnaise, and culinary cream applications. Pharmaceutical grades hit 70 to 80 percent phosphatidylcholine and supply intravenous lipid emulsions, liposomal drug carriers, and parenteral nutrition formulas.
Ultra-high purity fractions reaching above 95 percent phosphatidylcholine are produced by chromatographic refinement and used in research-scale liposome and exosome work.
Selected grades are also offered as deoiled powders for dry-blend pharmaceutical and nutraceutical use.

The European Pharmacopoeia carries a monograph for egg phospholipid (Lecithinum ex ovo) covering pharmaceutical and parenteral grades. The United States Pharmacopeia includes corresponding monographs for lecithin and egg phospholipids used in injectable formulations.
Kosher certification is widely available. Halal certification depends on the egg sourcing chain and is available from selected suppliers.
Manufacturing Process
Egg Yolk Lecithin is produced from fresh or spray-dried chicken egg yolk.
The yolk is first separated from the egg white in a continuous breaking line and then either chilled for immediate processing or spray-dried for stable transport. Solvent extraction with ethanol or an ethanol-acetone mixture dissolves the phospholipid fraction while leaving most triglycerides and cholesterol in the residue.
The crude extract is concentrated under vacuum and further purified by selective precipitation with cold acetone. The phospholipid concentrate is then dried under nitrogen to limit oxidation.
Pharmaceutical and high purity grades undergo additional chromatographic polishing on alumina or silica columns to lift phosphatidylcholine content above 95 percent.
