Magnesium Lactate
Magnesium Lactate is the magnesium salt of lactic acid, with the formula Mg(C₃H₅O₃)₂ and a molar mass of 202.45 g/mol for the anhydrous form. It is most often sold as the dihydrate, Mg(C₃H₅O₃)₂·2H₂O, as a white to off-white crystalline powder with a faint, slightly milky taste.
The compound is one of the most physiologically friendly magnesium salts on the market. It dissolves cleanly in water, delivers about 12 percent elemental magnesium in the dihydrate form, and is metabolized entirely through normal carbohydrate pathways once absorbed. That combination makes it the magnesium of choice for sustained-release pharmaceutical formats and for dairy-based fortification.

Magnesium Lactate is graded by stereochemistry, hydration state, and pharmacopoeial conformance.
The L-(+) form is produced by lactic-acid fermentation and is the standard input for nutritional and pharmaceutical use, since L-lactate is the isomer recognised by mammalian metabolism. A racemic D,L form is produced for some industrial and feed applications at lower cost.
The dihydrate is the dominant commercial hydration form. An anhydrous powder is also available for moisture-sensitive direct-compression tablet blends.
USP and Ph. Eur. pharmaceutical grades carry tight limits on free lactic acid, chloride, sulphate, calcium, lead, and arsenic.
Food-additive grade matches FCC and the E329 specification, used as an acidity regulator, flour treatment agent, and mineral fortificant.
Granular grades are formulated for sustained-release tablets and for direct-compression tabletting, while micronized powders are used in capsule fills, gummies, and beverage stick packs.

Regulatory Status
Magnesium Lactate is approved for food, supplement, and pharmaceutical use in essentially every regulated market.
In the European Union it carries the additive number E329 as an acidity regulator with quantum satis authorisation. It is also listed on Annex II of Regulation (EU) 1170/2009 as a permitted magnesium source in food supplements, restricted to the L-(+) isomer for that application.
The U.S. Food and Drug Administration recognises the substance as GRAS under 21 CFR 184.1311 for the lactate ion, with magnesium lactate covered as a permitted form for nutrient addition.
JECFA has reviewed magnesium salts as a group and assigned them acceptable status for use as food additives.
Pharmacopoeial monographs appear in the United States Pharmacopeia (USP) and the European Pharmacopoeia (Ph. Eur.) for the dihydrate. Halal and Kosher certifications are routine when the fermentation feedstock and process meet the relevant certification standards.
Manufacturing Process
Magnesium Lactate is produced by neutralisation of L-lactic acid with a magnesium source.
L-lactic acid is produced by submerged fermentation of glucose syrup, sucrose, or hydrolysed starch using strains of Lactobacillus, including L. delbrueckii and L. amylovorus. The broth is centrifuged, filtered, and concentrated to a food-grade aqueous solution.
The acid stream is then dosed with high-purity magnesium oxide, magnesium hydroxide, or magnesium carbonate at a 2:1 acid-to-metal stoichiometry. The reaction is mildly exothermic and runs to a clear, colourless endpoint.
The solution is filtered, decolorised through activated carbon, and crystallised by controlled cooling. The dihydrate crystallises preferentially across most operating windows.
Crystals are centrifuged, washed, and dried in fluid-bed or vacuum dryers at temperatures below 60 °C to keep the dihydrate intact. The dried product is milled to specification and packed under controlled humidity.
