Mogroside
Mogroside is the umbrella name for the family of cucurbitane-type triterpenoid glycosides found in the fruit of Siraitia grosvenorii, the plant commonly known as monk fruit or luo han guo.
The family ranges from mogroside I through mogroside VI, distinguished by the number of glucose residues attached to the mogrol aglycone. Sweetness rises sharply with glucose count, with the higher members reaching several hundred times the sweetness of sucrose on a weight basis.

Common Markets Grades
Mogroside is sold as the generic category of monk fruit extract, with grade defined by total mogroside content.
Common commercial cuts are 10, 20, 25, 30, 40, 50, and 60 percent total mogrosides. The 25 and 40 percent grades are widely used in beverage and dairy work, while the 50 and 60 percent grades are reserved for premium tabletop and supplement formulations.
Within each total-mogroside grade, the mogroside V fraction can be specified separately, typically as a percentage of total mogrosides. A 50 percent total mogroside extract with 25 percent mogroside V is a common reference grade.
Lower-content grades at 10 to 20 percent are used as flavour and mouthfeel modifiers rather than as primary sweeteners.

Regulatory Status
Mogroside extracts from Siraitia grosvenorii are accepted as sweeteners and flavour ingredients in most major markets, with the regulatory route varying by purity and intended use.
In the United States, monk fruit extracts at defined mogroside V levels are recognised under multiple GRAS notices submitted to the Food and Drug Administration. The European Union authorised monk fruit extract as a food additive under E968 in 2024, with sub-categories for different mogroside V levels.
JECFA evaluated Siraitia grosvenorii extracts and concluded that an ADI was not required at typical use levels, based on the available safety data.
Kosher, Halal, and Non-GMO Project certifications are routinely available, as the production process uses only the native plant and standard food-grade aids.
Manufacturing Process
Production begins with fresh or dried monk fruit, sourced almost entirely from the karst-mountain growing region around Guilin in southern China, where the plant has been cultivated for centuries.
Fresh fruit is pulped and pressed to release juice, while dried fruit is rehydrated and extracted with hot water. The aqueous extract is filtered to remove pulp and insoluble matter, then decolorised with activated carbon to soften the strong brown colour and reduce the off notes from the fruit shell.
The decolorised extract is loaded onto macroporous adsorbent resins that selectively bind the mogrosides while releasing sugars, organic acids, and pigments. Elution with food-grade ethanol yields an enriched mogroside fraction.
Concentration under vacuum and spray drying produces the finished powder. The total mogroside percentage and the mogroside V fraction are tuned by repeating the adsorption and elution steps or by blending material from different lots.
