Mogroside V

Mogroside V is the dominant sweet cucurbitane glycoside in the fruit of Siraitia grosvenorii, the monk fruit, and the molecule that defines the modern monk fruit sweetener category.

The structure is a pentaglycoside built on the mogrol aglycone, with three glucose units at C3 and two glucose units at C24. The compound is roughly 250 to 400 times sweeter than sucrose with a clean sweet character and a mild lingering finish.

Mogroside V is graded by purity expressed on a dry basis.

The 25 percent grade is the entry-level monk fruit extract for cost-driven beverage and tabletop work. The 40 percent grade is the most widely used commercial cut for beverages, dairy, and confectionery.

The 50 percent grade is the standard premium grade. Higher purities at 60, 80, and 95 percent are produced for clean-label beverage launches, supplement applications, and pharmaceutical taste masking where minimal off notes are required.

Soluble grades are co-processed with maltodextrin, fibre, or erythritol to improve dispersibility and to provide bulk in tabletop and dry-mix formats.

Regulatory Status

Mogroside V is the principal sweet active recognised in monk fruit extract specifications across major regulators.

In the United States, monk fruit extracts standardised to defined mogroside V levels are recognised under multiple GRAS notices submitted to the Food and Drug Administration. The European Union authorised monk fruit extract under E968 in 2024, with specifications anchored to mogroside V content.

JECFA evaluated Siraitia grosvenorii extracts standardised to mogroside V and concluded that an ADI was not required at typical use levels.

Kosher, Halal, and Non-GMO Project certifications are routinely available. Organic-certified versions are produced from organic-cultivated fruit and processed under approved organic processing aids.

Manufacturing Process

Production starts with fresh or dried monk fruit harvested in Guangxi province and surrounding karst-mountain regions of southern China.

Fresh fruit is pulped and pressed to release juice, while dried fruit is rehydrated and extracted with hot water. The aqueous extract is clarified by filtration, then decolorised over activated carbon to remove the deep brown pigments characteristic of the dried fruit shell.

The decolorised extract is loaded onto macroporous adsorbent resins that capture the mogrosides while releasing fructose, glucose, and minor co-extractives. Elution with food-grade ethanol releases an enriched mogroside fraction.

For higher-purity grades, the eluate is further fractionated through repeated adsorption cycles and through crystallisation or membrane separation. The mogroside V content is concentrated relative to the lower mogrosides at each pass. Final spray drying yields a free-flowing off-white to pale tan powder.
