Monoammonium Glycyrrhizinate is the singly-protonated ammonium salt of glycyrrhizic acid, assigned CAS number 53956-04-0 and sold as a yellowish crystalline powder.
Compared with the tri-salt, the mono-salt carries a single ammonium counter-ion balancing one of the three carboxylate groups of the glycyrrhizinate anion, leaving the other two protonated. Monoammonium Glycyrrhizinate falls under the same regulatory framework as other glycyrrhizinate salts. In the European Union it is covered by the food additive code E958 as an ammonium salt of glycyrrhizic acid.
The United States Food and Drug Administration treats it as GRAS under 21 CFR 184.1408 (licorice and its derivatives), with the same use-level limits and the same consumer guidance to keep glycyrrhizin intake below roughly 100 mg per day to avoid pseudoaldosteronism.
EFSA opinions on glycyrrhizin from 2024 apply equally to mono- and tri-ammonium forms, since they release the same glycyrrhizinate anion in solution.
Japan permits the salt as a natural sweetener and flavour enhancer. Kosher and Halal certifications exist from licorice extract producers.
Manufacturing Process
Monoammonium Glycyrrhizinate is prepared by acidifying a hot-water licorice extract with sulphuric acid to precipitate free glycyrrhizic acid.
The crude acid is washed and redissolved in a controlled stoichiometric amount of aqueous ammonia, just enough to neutralise one of the three carboxyl groups. Maintaining the correct molar ratio is the central step that distinguishes the mono-salt from the tri-salt.
The solution is decolorised with activated carbon, polished by filtration, and then either spray-dried or recrystallised from aqueous ethanol.
Final material is milled to the desired particle size and tested by HPLC, with separate checks for free ammonia, residual sulphate, and heavy metals.
