Oat Beta-Glucan is a linear soluble polysaccharide built from glucose units joined by a mix of β(1→3) and β(1→4) bonds. It is the cell-wall fibre concentrated in the bran and subaleurone layers of oat (Avena sativa) kernels.
The polymer hydrates into a viscous solution and is the active fibre responsible for the cholesterol-lowering health claims authorised in the United States, the European Union, and Canada.

Common Markets Grades
Oat beta-glucan is graded by beta-glucan content on a dry basis and by molecular weight.
Bran concentrate grades at 22 to 28 percent beta-glucan are produced by mechanical fractionation and air classification. They are the lowest-cost route to label-claim doses in cereal and bakery.
Mid-purity grades at 35 to 50 percent beta-glucan are produced by wet milling followed by selective starch hydrolysis. They suit beverages, dairy, and meal-replacement powders.
High-purity isolates at 70 to 80 percent beta-glucan are produced by enzymatic and alcohol-precipitation routes. They are used in supplements and clinical nutrition where dose and palatability matter.
Molecular weight is the second axis, ranging from low MW (less than 500 kDa) for fluid applications to high MW (above 2,000 kDa) for maximum viscosity and cholesterol-lowering performance.

Regulatory Status
Oat beta-glucan is one of the most regulated functional fibres.
The U.S. FDA authorised the health claim soluble fibre from whole oats may reduce the risk of heart disease in 1997 under 21 CFR 101.81, with a qualifying intake of 3 g of oat beta-glucan per day.
EFSA approved the claim oat beta-glucan has been shown to lower blood cholesterol in 2010 and the second claim consumption of beta-glucans from oats as part of a meal contributes to the reduction of blood glucose rise after that meal in 2012.
Health Canada authorised the equivalent cholesterol-lowering claim with the same 3 g per day threshold. The substance is GRAS for U.S. food use.
Manufacturing Process
Manufacturing routes split into dry, wet, and enzymatic categories.
Dry milling produces oat-bran concentrate. Cleaned oats are dehulled, kilned, and rolled. The bran fraction is then milled and air-classified to enrich beta-glucan to roughly 22 to 28 percent.
Wet processing uses ethanol or water extraction of the bran. After alpha-amylase digestion of residual starch and protease treatment to reduce protein, the beta-glucan-rich liquor is concentrated, alcohol-precipitated, and dried to mid- and high-purity grades.
Membrane filtration and chromatographic polishing are added for the highest purities. Care during extraction is critical because shear, temperature, and pH all degrade molecular weight, which directly reduces functional performance.
