Pullulan
Pullulan is a linear α-glucan polysaccharide produced by aerobic fermentation of the polymorphic fungus Aureobasidium pullulans. The polymer is built from maltotriose units linked by α-1,6 bonds, giving a regular repeating structure unique among commercial gums.
The molecule is highly water-soluble, forms transparent oxygen-barrier films when cast from solution, and lacks the gelling behaviour of most other polysaccharides. It is the leading natural polymer for edible film applications.

Food-grade pullulan is the standard for breath strips, edible films, capsules, and confectionery coatings.
Pharmaceutical-grade pullulan meets monograph specifications and is used for hard two-piece capsule shells as a gelatin alternative.
Cosmetic-grade pullulan is produced for facial mask films, hair styling products, and skincare film-formers.
Molecular weight grades range from 100 thousand daltons for low-viscosity applications up to 800 thousand daltons for premium capsule and film use. Spray-dried free-flowing powder and dense granulated formats are both available.

We send 100 to 500 g free for your own laboratory to test and you cover only the courier, usually within 2 to 3 working days. ETD is usually within 7 to 15 days once the order is confirmed, and we check that date against the factory's own manufacturing schedule before we give it to you.
Combined Shipment
We can load Pullulan together with other ingredients such as Carrageenan, Sodium Carboxymethyl Cellulose and Agar Agar into one 20' FCL. If your quantity is small, we can also ship LCL.
Regulatory Status
Pullulan is approved as a food additive in essentially all regulated markets.
Regulation (EC) No 1333/2008 lists it as E1204 in the European Union, restricted to film-coated food supplements and breath-freshening films. The U.S. FDA permits pullulan as GRAS for general food use under multiple GRAS notices.
JECFA has assigned ADI not specified. Japan has approved pullulan since the 1970s as a thickener and film former. Halal, Kosher, vegan, non-GMO, and gluten-free certifications are routinely available.
Manufacturing Process
Pullulan is produced by aerobic fermentation of selected strains of Aureobasidium pullulans on a starch hydrolysate or sucrose medium.
Fermentation runs at 24 to 28 °C for four to six days. The fungus secretes pullulan into the broth, where viscosity rises steadily. Yeast-like growth dominates early, with hyphal forms appearing as nutrients deplete.
After fermentation, the broth is heat-killed, then filtered or centrifuged to remove cells and pigment. The clarified broth is decolourised with activated carbon, deionised through ion-exchange resin, and spray-dried.
For premium capsule grades, additional ultrafiltration and molecular-weight fractionation steps standardise the polymer profile.
