Liquid juice concentrate at 40 to 65 degrees Brix is the highest-volume format. It carries the colour, the natural sugars, and the soluble solids of the root in a syrup that is easy to dose into beverages.
Powdered colouring foods are spray-dried on maltodextrin or on fruit-and-vegetable carriers. Colour strength is typically declared by the E1cm 1 percent absorbance value at the wavelength of maximum absorption near 520 nm, or by total monomeric anthocyanin content expressed as cyanidin-3-glucoside equivalents.
Standardised supplement-grade powders deliver 5 to 25 percent total anthocyanins by the pH-differential method and are intended for capsules, tablets, and stick packs.

Regulatory Status
Purple Carrot Extract falls into two regulatory tracks.
The juice concentrate and colouring-food format are treated as foods or colouring foods rather than as a food additive. They are governed by the EU colouring foods guidance document and by equivalent treatment in other jurisdictions, where the colouring effect comes from an ingredient that retains the character of the source food.
The selectively extracted, purified anthocyanin format is regulated in the European Union as a food additive under the umbrella of anthocyanins. In the United States, 21 CFR 73.250 and 73.260 list fruit-juice and vegetable-juice colours, which are exempt from certification.
JECFA has evaluated grape skin extract and related anthocyanin colours and has accepted them as colours for food at conventional use levels.
The ingredient is suitable for vegan, vegetarian, Halal, and Kosher positioning, and organic-certified material is produced where the cultivation and the carrier match the certifying body's requirements.
Manufacturing Process
Production starts in the field. Black carrot is grown mainly in Turkey, particularly the Konya plateau, and to a smaller extent in southern Europe and parts of China. Roots are harvested in autumn and pressed within hours to limit microbial fermentation.
The raw juice is depectinized with food-grade pectinase to lower viscosity and to free more pigment from the cell-wall matrix. Some producers carry out a controlled lactic fermentation at this stage. Fermentation lowers the sugar load and removes off-notes, which is helpful for low-sugar beverage applications.
The clarified juice is concentrated by reverse osmosis or by vacuum evaporation to the target Brix. Aroma recovery is rarely used because the carrot character is not desired in most end products.
For higher-purity anthocyanin powders, the concentrate is loaded onto food-grade macroporous resin columns. Sugars and organic acids are washed off with water, and the bound pigments are recovered with food-grade ethanol. The ethanol eluate is desolventized and spray-dried on a carrier.
Colour strength is verified by spectrophotometry, and anthocyanin profile is checked by HPLC against authentic standards of cyanidin-3-xylosyl-glucosyl-galactoside and its acylated derivatives.
