Resveratrol is a naturally occurring stilbenoid polyphenol found in the skins of red grapes, in peanuts, and at high concentration in the roots of Japanese knotweed (Polygonum cuspidatum, also known as Reynoutria japonica). It is a small molecule with the formula C₁₄H₁₂O₃ and a molecular weight of 228.25 g/mol.
The compound exists in two geometric isomers, trans-resveratrol and cis-resveratrol, with the trans form being the biologically active and commercially relevant species. Commercial material is typically standardised as trans-resveratrol at 50 to 99 percent purity.

Resveratrol is graded by trans-isomer content and source.
The 50 percent grade is a brown to beige powder derived from Polygonum cuspidatum root extract and is commonly used as a low-cost active in entry-level supplements and cosmetic blends.
The 98 to 99 percent trans-resveratrol grade is the supplement-industry standard, sold as an off-white to light beige crystalline powder with very low residual anthraquinone content. This grade is the basis for most clinical studies and premium formulations.
Pharmaceutical and reference grades at 99.5 percent and above are produced for research use and as analytical standards. They carry full impurity profiling including emodin, physcion, and other anthraquinone markers.
Microencapsulated, liposomal, and cyclodextrin-complexed formats are produced to improve dissolution rate and oxidative stability, since pure trans-resveratrol crystals are light-sensitive and slowly isomerise to the cis form.

Resveratrol is regulated as a food ingredient or food supplement in most major markets, not as a food colour or additive.
In the European Union, trans-resveratrol from Polygonum cuspidatum root extract is authorised as a Novel Food under Regulation (EU) 2015/2283, with specific conditions of use and maximum daily levels in food supplements for adults.
The U.S. Food and Drug Administration has acknowledged multiple GRAS notifications for resveratrol, including synthetic and fermentation-derived material, for use in defined food and beverage categories. It is also widely marketed as a dietary supplement ingredient under DSHEA.
Health Canada has issued Natural Product Numbers for resveratrol-containing products, with permitted claims focused on antioxidant activity and cellular health support.
Reference monographs for trans-resveratrol have been published by the United States Pharmacopeia. Kosher and Halal certifications are commonly available, and fermentation-derived material is increasingly offered with vegan and non-GMO documentation depending on the production strain.
Manufacturing Process
Two industrial routes account for nearly all commercial resveratrol supply.
The dominant route is solvent extraction from the rhizomes of Polygonum cuspidatum, an aggressive perennial cultivated and wild-harvested across East Asia. The dried roots contain 1 to 5 percent resveratrol, mostly bound as the glucoside polydatin, which is hydrolysed to free resveratrol during processing.
Roots are washed, milled, and extracted with hot ethanol or aqueous ethanol. The extract is concentrated, treated with enzymes or dilute acid to cleave polydatin, then purified by liquid-liquid partition and recrystallisation to yield 50 percent or 98 percent trans-resveratrol powder. Anthraquinone removal is a critical step.
The fermentation route uses engineered strains of Saccharomyces cerevisiae or Escherichia coli expressing a heterologous pathway from phenylalanine through p-coumaric acid to resveratrol. Several producers operate this route commercially, supplying material marketed as fermentation-derived or biosynthetic resveratrol.
A minor amount of resveratrol is also produced by chemical synthesis from 3,5-dihydroxybenzaldehyde and 4-hydroxybenzaldehyde via a Wittig or Heck-type coupling, primarily for research material and high-purity reference standards.
