Sodium Erythorbate

Sodium Erythorbate is the sodium salt of D-isoascorbic acid (erythorbic acid), used industrially as the workhorse antioxidant and cure accelerator additive E316.

The molecule (CAS 6381-77-7, C₆H₇NaO₆·H₂O, molecular weight 216.12 g/mol as the monohydrate) is a white to slightly yellow crystalline powder, highly water-soluble (more than 16 g per 100 mL at 25 degrees Celsius) and with a near-neutral aqueous pH.

Common Markets Grades

Sodium Erythorbate is produced primarily in fine powder and granular grades.

Fine powder grades are standard for cured meat brines, where rapid and complete dissolution is essential before injection or tumbling.

Granular grades are used in dry rubs, dry seasoning blends, and direct addition to beverage premixes.

The standard commercial assay is not less than 98 percent on a dried basis, with most modern grades delivering 99 percent or higher.

FCC food-grade material is the standard supply. Most production today originates in China, with secondary supply from Japan and Europe. Each lot is qualified by assay, specific rotation, water content, heavy metals, and trace iron, the last because residual iron catalyses oxidative degradation during storage.

Regulatory Status

Sodium Erythorbate is approved as a food additive globally.

In the European Union it carries the E number E316, permitted under Regulation (EC) 1333/2008 in defined cured meat, cured fish, and beverage categories.

The U.S. FDA lists it as GRAS under 21 CFR 182.3731 alongside sodium ascorbate, and USDA FSIS regulations specifically permit sodium erythorbate in cured meat at defined inclusion rates as a cure accelerator.

JECFA has reviewed the substance together with erythorbic acid and assigned a group ADI not specified.

The substance carries no vitamin C activity for human nutrition and must not be declared as vitamin C on food labels. Kosher, Halal, and non-GMO certifications are routinely available.

Manufacturing Process

Sodium Erythorbate is produced by neutralisation of D-isoascorbic acid (erythorbic acid) with sodium bicarbonate or sodium carbonate in cold aqueous solution under inert atmosphere.

The reaction releases carbon dioxide and yields a near-neutral solution of the sodium salt. The solution is filtered through a polishing filter, concentrated under vacuum, and crystallised by addition of ethanol or by controlled cooling.

Crystals are filtered, washed with cold ethanol, and dried under vacuum at temperatures below 60 degrees Celsius to preserve the monohydrate form and avoid oxidative discoloration.

The starting erythorbic acid is fermentation-derived from D-glucose in modern supply chains.

Each lot is verified by assay, water content (typically 8 to 9 percent as the monohydrate), specific rotation, heavy metals, and trace iron. Storage in airtight, light-protected containers is essential because the dissolved salt oxidises rapidly in the presence of air, moisture, and metal ions.
