Soluble Soybean Polysaccharide
Soluble Soybean Polysaccharide (SSPS) is an acid-extracted polysaccharide recovered from the cotyledon cell walls of soybean (Glycine max). The molecule consists of a galacturonic-acid backbone with rhamnose and galactose-rich side chains, structurally related to plant pectins but with a distinct branching architecture.
SSPS is freely water-soluble, produces low-viscosity solutions, and forms stable suspensions with proteins under acidic conditions. That last property has made it the standard stabiliser for acidified protein beverages in Asia.

Common Markets Grades
SSPS is graded by viscosity and by intended application.
Low-viscosity grades (under 50 mPa·s at 10 percent solution) are used for acidified milk drinks, fruit juice with protein, and meal-replacement beverages.
Medium-viscosity grades (50 to 150 mPa·s) are used for cloudy fruit juices, sports drinks, and as a film-forming coating for noodles and confectionery.
High-viscosity grades above 150 mPa·s are used as a binder in extruded snacks, low-fat sauces, and processed meat.
Spray-dried and roller-dried formats are both available. Non-GMO and identity-preserved grades are produced for European and Japanese markets.

Regulatory Status
SSPS is approved as a food ingredient in most major markets.
The U.S. FDA accepts SSPS under GRAS notification GRN 220 covering use in beverages, dairy, and bakery at defined levels. Subsequent notifications extend the scope to additional categories.
In the European Union SSPS is treated as a food ingredient without an E number and is declared on labels as soluble soybean polysaccharide or soybean fibre.
Japan's Ministry of Health, Labour and Welfare recognises SSPS within its existing food additive framework and within several Foods for Specified Health Uses (FOSHU) approvals.
Allergen labelling for soy is required in all markets that list soy among declared allergens.
Manufacturing Process
SSPS is manufactured almost exclusively in Japan and China, with Fuji Oil Holdings being the original commercial producer. The starting material is okara, the insoluble cotyledon residue from soy milk and tofu manufacture.
Wet okara is washed and treated with dilute mineral acid at elevated temperature. The acid breaks the bonds linking the pectic polysaccharide to the cellulose-hemicellulose cell wall, releasing SSPS into solution.
The acid extract is neutralised, clarified by centrifugation and filtration, and concentrated by evaporation or membrane filtration. Protein and residual saponins are removed by selective precipitation or ion exchange.
The purified solution is spray-dried to yield the finished powder. Different viscosity and functional grades are produced by controlling extraction time, temperature, and acid concentration.
