Stachyose
Stachyose is a tetrasaccharide of the raffinose family, composed of two galactose units, one glucose unit, and one fructose unit linked α-1,6 and α,β-1,2.
It occurs naturally in legumes, particularly soybeans, lupins, and Stachys tubers, which give the molecule its name.
Stachyose is non-digestible in the human small intestine and reaches the colon intact, where it is fermented by gut bacteria to short-chain fatty acids. This makes it a recognised prebiotic that selectively stimulates bifidobacteria and lactobacilli.

Stachyose is produced mainly as a high-purity dietary supplement ingredient and as part of soybean oligosaccharide concentrates.
Pure stachyose grade typically declares 70 to 95 percent stachyose with the balance being raffinose, verbascose, and minor sugars. It is a white to off-white powder.
Soybean oligosaccharide grade is a less refined product declaring around 70 percent oligosaccharides (stachyose plus raffinose) and is used as a bulk prebiotic.
Pharmaceutical-style grade exists for clinical trial and infant nutrition research use, with tighter limits on residual protein and lectin.

Stachyose is treated as a food ingredient or dietary supplement ingredient in most major markets, with no specific E number.
The U.S. FDA accepts it as a self-affirmed GRAS ingredient based on its long history of consumption in legumes.
Japan recognises soybean oligosaccharides (containing stachyose and raffinose) under the Foods for Specified Health Use framework with approved gut-health claims.
China lists stachyose as a permitted novel food ingredient with defined intake limits.
Manufacturing Process
Stachyose is recovered from soybean whey, a coproduct of soy protein concentrate manufacture.
Defatted soybean meal is extracted with aqueous ethanol to dissolve the soluble oligosaccharides. The extract is concentrated and decolorised.
The crude oligosaccharide solution is fractionated by chromatography on a calcium-form ion-exchange resin to separate stachyose from raffinose, verbascose, sucrose, and minor sugars.
The stachyose-enriched fraction is decolorised, demineralized, concentrated, and either spray-dried or crystallised.
An alternative source is Stachys tubers (Chinese artichoke), where stachyose is the dominant storage carbohydrate and can be extracted with water and purified by similar means.
