Cut size grades follow the same convention as plain nata: small (5 millimeter) for bubble tea and drinks, medium (10 millimeter) for fruit cocktails and desserts, large (15 millimeter) and strip-cut for desserts and snack packs.
Syrup sugar level runs from light (15 to 25 percent Brix) for low-sugar dessert applications through medium (30 to 40 percent) for standard retail packs to heavy (45 to 55 percent) for long shelf life and intense sweetness.

Manufacturing Process
Production starts with plain nata de coco pellicle harvested from coconut-water fermentation with Komagataeibacter xylinus. The pellicle is washed, boiled to inactivate residual bacteria, and cut to size.
Cut nata is rinsed in fresh water to remove residual fermentation acid, then transferred to a syruping tank. The syrup is prepared from sugar, water, and optional fruit concentrate, citric acid for tartness, flavour, colour, and preservatives if needed.
The cubes soak in syrup at 60 to 80 degrees Celsius for 30 to 90 minutes, depending on syrup concentration and target equilibrium. During soaking the syrup penetrates the cellulose network and replaces interstitial water by osmotic exchange.
The infused cubes are filled into final retail or catering packs with additional syrup to cover. Glass jars and cans are filled hot, sealed, and pasteurised at 85 to 95 degrees Celsius for 10 to 25 minutes to ensure shelf stability.
Plastic pouches and cups are hot-filled and sealed in line, then water-cooled to ambient before cartoning. Shelf life under ambient storage is typically 12 to 24 months for sealed packs, with refrigeration recommended after opening.
