Textured Soy Protein Concentrate is a high-protein extruded ingredient produced from soy protein concentrate (SPC) rather than from defatted soy flour. It is commonly abbreviated as TSPC.

The higher protein base gives TSPC denser, more meat-like fibres, cleaner flavour, and lower oligosaccharide content than standard textured soy protein. These attributes have made it the preferred substrate for premium meat analogues.

Textured Soy Protein Concentrate is graded principally by protein content and fibre length.

The standard composition runs at 68 to 72 percent protein on a dry basis, with most of the soluble carbohydrates already removed during the upstream concentrate process.

Shape grades cover fine mince (2 to 4 mm) for nuggets and patties, medium chunks (8 to 12 mm) for stir-fry and curry applications, and large strips up to 40 mm in length for jerky and pulled-meat analogues.

Long-fibre grades produced on high-moisture extruders carry distinct directional fibres visible to the naked eye. These reach the market as chicken-breast or pulled-pork style materials and command a price premium.

Regulatory Status

Textured Soy Protein Concentrate is treated as a conventional food ingredient.

In the United States it falls under 21 CFR as a soy protein product, with use in meat and poultry products governed by USDA FSIS standards of identity and labelling rules.

The European Union accepts TSPC as a standard ingredient under EU food law. Mandatory allergen labelling for soy applies under Regulation (EU) 1169/2011.

Codex Alimentarius standard CXS 175-1989 covers compositional requirements for soy protein concentrate, including the textured form.

Most commercial TSPC is produced from non-GMO identity-preserved soybeans to support clean-label positioning, and Kosher and Halal certifications are widely available. Vegan and vegetarian certifications are standard.

Manufacturing Process

Production begins with soy protein concentrate, made by washing defatted soy flake with aqueous ethanol or acidified water to remove soluble sugars and most of the off-flavour compounds. The resulting concentrate contains 65 to 72 percent protein.

The concentrate is conditioned with water to 25 to 40 percent moisture and fed into a twin-screw extruder. Two distinct extrusion modes are used.

Low-moisture extrusion at 25 to 30 percent water and barrel temperatures of 150 to 170 degrees Celsius produces the classic puffed, sponge-like TSPC pieces that rehydrate in water.

High-moisture extrusion at 55 to 70 percent water with a long cooling die produces dense, aligned-fibre material that exits the die already hydrated. This is the texture platform behind most modern premium meat analogues.

Finished low-moisture material is dried, screened, and packed. High-moisture material is produced frozen or refrigerated.
