Defatted Soy Flake

Defatted Soy Flake is the solid residue left after hexane extraction of oil from cracked, dehulled, and conditioned soybeans. It is the master raw material from which essentially all higher-value soy protein ingredients are derived.

The flake retains roughly half of the protein and nearly all of the carbohydrate and ash from the parent soybean, while the oil content is reduced from about 20 percent to less than 1 percent.

Common Markets Grades

Defatted Soy Flake is graded primarily by protein dispersibility index (PDI) and by intended downstream use.

High-PDI white flake (PDI 70 to 90) is minimally heat-treated and preserves protein solubility and enzyme activity. This is the starting material for soy protein isolate, soy protein concentrate, and enzyme-based hydrolysates.

Medium-PDI flake (PDI 40 to 70) is partially toasted and feeds into soy flour and grits production for bakery and food processing.

Low-PDI flake (PDI 10 to 30) is fully toasted to inactivate trypsin inhibitors and is used for animal feed, soy sauce brewing, and fermented food production.

Hexane-free flake produced by aqueous or alcohol extraction is produced for clean-label and organic markets at premium pricing.

Regulatory Status

Defatted Soy Flake is regulated as a food ingredient and animal feed material in most jurisdictions.

In the United States it is recognised under 21 CFR for food use, with residual hexane limits enforced under FDA guidance for processing aids. Feed-grade flake falls under AAFCO definitions.

The European Union covers hexane as an approved extraction solvent under Directive 2009/32/EC, with residual solvent limits set in the same instrument. Soy is a labelled allergen under Regulation (EU) 1169/2011.

Codex Alimentarius standard CXS 175-1989 covers soy protein products derived from soy flake.

Most commercial defatted soy flake is from conventional soybeans. Identity-preserved non-GMO and Organic streams exist at higher cost. Kosher and Halal certifications are widely available.

Manufacturing Process

Production starts with clean, dry soybeans at roughly 10 percent moisture. The beans are cracked into four to six pieces, the hulls are aspirated off, and the meats are conditioned with steam to about 11 percent moisture at 65 degrees Celsius.

The conditioned meats are passed through a pair of large smooth rolls and flattened into thin flakes of 0.25 to 0.35 mm. The flake form maximises surface area for solvent contact.

The flakes enter a countercurrent extractor where food-grade hexane dissolves the soybean oil. The miscella (oil in hexane) is drained off for downstream desolventizing and refining.

The defatted flakes leaving the extractor still carry roughly 30 percent hexane. They pass through a desolventizer-toaster (DT) where steam strips out the residual solvent. The DT residence time and temperature also determine the final PDI of the flake.

For high-PDI flake, a flash desolventizer system (FDS) is used instead. The FDS removes hexane at lower temperatures and preserves native protein structure.
