Water Soluble Paprika Oleoresin is a paprika colour preparation in which the lipid-soluble carotenoid extract from Capsicum annuum has been emulsified or polysorbate-modified into a form that disperses readily in aqueous food systems.

Native paprika oleoresin is an oily liquid that bleeds out of any water-continuous phase and demands either a fat carrier or aggressive mechanical emulsification. The water-soluble form solves that problem at the formulation level, producing a single-phase colour that can be added to drinks, brines, marinades, and clear sauces without separation.

Water Soluble Paprika Oleoresin is graded by colour value in ASTA units and by the choice of emulsifier system.

Common loadings run from 10,000 to 40,000 ASTA in liquid form, lower than the standard 60,000 to 100,000 ASTA of straight oleoresin because the carrier system dilutes the pigment phase. Spray-dried powders on gum acacia, modified starch, or maltodextrin carriers reach 1 to 5 percent total carotenoids.

Polysorbate 80 is the most common emulsifier in classical formulations, often combined with propylene glycol and water as a co-solvent system. Polysorbate-free grades using modified starch, gum arabic, sucrose esters, or lecithin are increasingly produced for clean-label requirements.

Decapsaicinized water-soluble grades, with capsaicinoid content typically below 500 Scoville Heat Units, are produced where any heat note would conflict with the target flavour profile. Standard heated grades retain the natural pungency of the parent oleoresin.

Regulatory Status

Water Soluble Paprika Oleoresin shares the underlying regulatory footprint of native paprika oleoresin, with the additional requirement that any emulsifier or carrier used be permitted in the target application.

In the European Union the pigment fraction falls under paprika extract E160c, and the emulsifier system must be declared separately if it is not already a permitted carrier. Polysorbate 80 is approved as a food additive under E433 with its own use-level restrictions, while gum arabic, modified starches, and sucrose esters carry their own listings.

The U.S. Food and Drug Administration permits paprika and paprika oleoresin as colour additives exempt from certification under 21 CFR 73.340 and 21 CFR 73.345. Polysorbate 80 and the alternative emulsifiers used in water-soluble grades are addressed separately under their own regulations.

JECFA has evaluated paprika extract and assigned an acceptable status for use as a colour. Kosher and Halal certification is generally available for both the pigment and the common emulsifier systems, subject to verification of the specific carrier used.

Manufacturing Process

Production starts from a standardised native paprika oleoresin in the 60,000 to 120,000 ASTA range, produced by solvent extraction of dried red paprika pods. The choice of starting oleoresin determines the final hue, with redder oleoresins giving cleaner red tones and more orange-leaning oleoresins giving warmer shades.

The lipid oleoresin is then formulated into an aqueous-dispersible form. In the classical polysorbate route, the oleoresin is blended at elevated temperature with polysorbate 80, optionally with a co-emulsifier and propylene glycol, then diluted into water to give a microemulsion or fine emulsion with droplet sizes typically below one micron.

In clean-label production the polysorbate is replaced by gum arabic, modified food starch (octenyl succinate-modified), sucrose esters, or lecithin systems. These formulations usually require high-pressure homogenisation or microfluidization to reach a comparable droplet size and stability.

Liquid finished product is filled into nitrogen-flushed containers to limit oxidative loss, while powder finished product is obtained by spray-drying the emulsion onto a maltodextrin or gum acacia carrier. The latter form is preferred for dry-blend applications and for shipping economics, since liquid grades are largely water.
