Applephenon is a trade designation for a standardised apple polyphenol preparation made from unripe apples of Malus domestica, sold as a fine powder for supplement and functional food use. The material sits within the wider apple polyphenol category but is distinguished by its feedstock, immature fruit thinned from the orchard before sugar accumulation, in which the phenolic concentration is several times that of ripe fruit.

The phenolic profile is dominated by oligomeric procyanidins built from catechin and epicatechin units, which typically account for more than half the total polyphenol figure. Chlorogenic acid, phloridzin, phloretin and quercetin glycosides make up the balance, with phloridzin serving as the marker that confirms apple origin, since it occurs in few other food plants.

Regulatory Status

In the United States, apple polyphenol preparations of this type are used as dietary ingredients under the Dietary Supplement Health and Education Act, with finished products manufactured under 21 CFR Part 111. Specific commercial apple polyphenol ingredients have been notified to the Food and Drug Administration as generally recognised as safe for defined food and beverage applications, and the agency responded to those notifications without objection. Apple extracts used at flavour level are covered by the flavouring provisions instead.

In the European Union the preparation is a food or food supplement ingredient rather than an authorised food additive, so it carries no E number and its antioxidant function cannot be declared in the additive sense. Conventional aqueous and ethanolic extracts of apple fruit rely on a history of consumption in the Union, while extracts concentrated to an atypical composition or produced by an unusual process fall within the novel food regulation and require assessment before marketing. Codex has no commodity standard covering apple polyphenol preparations and JECFA has issued no additive specification for them.

Manufacturing Process

Unripe apples thinned from the orchard are washed, milled and extracted with water or with aqueous ethanol under conditions that limit air contact, since the fruit's own polyphenol oxidase browns the phenolics quickly once the tissue is broken. The extract liquor is separated from the pomace by pressing and decanting, then clarified by centrifugation and membrane filtration to remove pectin and fine solids.

The clarified liquor is loaded onto a macroporous adsorption resin that retains the phenolic fraction while sugars, malic acid and pectin pass to waste in the water wash. Elution with aqueous ethanol recovers the polyphenols, and the eluate is concentrated under vacuum at low temperature with solvent recovery. The concentrate is spray dried, alone for a carrier free powder or with maltodextrin where flow and a lower assay are wanted, then sieved, assayed by HPLC and blended across sub lots to a uniform procyanidin figure before packing in food grade liners inside fibre drums.
