Brewed Aged Vinegar
Brewing styling old vinegar is the trade description of a brewed type aged dark vinegar, produced entirely by fermentation from cereal grain and then matured, rather than blended from acetic acid. The style corresponds to the aged mature vinegars of northern China, made from sorghum, bran and barley or pea koji, and it is distinguished from ordinary table vinegar by a long solid state fermentation and an extended ageing period.
Its character comes from what the ageing does to the fermented liquor. Acetic acid provides the sourness, but the mature product also carries lactic, succinic and other non volatile organic acids, a high level of amino acids and reducing sugars from the grain, and melanoidins formed by Maillard reaction during a heat treatment of the mash. Those non volatile solids give the vinegar its dark colour, its thicker body and the smoky, almost malty note that separates it from wine or cider vinegar.
The liquid is deep brown to nearly black, more viscous than white vinegar, with a total acidity commonly between four and six percent. It is miscible with water, stable at ambient temperature, and darkens further on storage. Prolonged boiling drives off the volatile aroma, so it is usually added towards the end of cooking or used cold.

Common Markets Grades
Grades are set by total acidity, by non volatile solids and by declared ageing time, with the three moving together because the traditional maturation concentrates the liquid as water evaporates. Table grades sit at the lower end of acidity with a moderate solids figure, while aged grades sold on one, three or five years of maturation carry higher solids, a darker colour and a heavier body at a similar or higher acidity. Total acidity is declared in grams of acetic acid per hundred millilitres and is the figure a buyer specifies first.
Beyond age and strength, lines differ by grain recipe and by whether the vinegar is sold plain or seasoned. Plain aged vinegar is the base material for industrial use, while seasoned versions carry added sugar, salt, spice or fruit for retail dipping. Filtered clear grades are produced for bottling, unfiltered grades for further processing. The same base is also spray dried onto maltodextrin as a vinegar powder for dry seasoning blends, and organic certified lines require certified grain and no synthetic processing aids.

Regulatory Status
In the United States vinegar is a food rather than an additive, subject to a longstanding definition requiring at least four grams of acetic acid per hundred millilitres, and must be labelled so that the substrate and the production method are clear, for example as a cereal or grain vinegar. Vinegar and its acetic acid are recognised as generally recognised as safe for use in food. Where the vinegar is made from wheat or barley containing grain, gluten is a labelling consideration in that market even though wheat is declared as an allergen rather than as a gluten statement.
In the European Union brewed vinegar is a food covered by general food law and carries no E number of its own, though acetic acid used as an additive in its own right is listed as E 260. Labelling must name the substrate, and any added sugar, salt, colour or preservative in a seasoned version must be declared, with additives restricted to those permitted for the food category. Cereals containing gluten must be emphasised in the ingredient list. Codex addresses the product through its regional standard for vinegar, which sets minimum acidity, defines fermented vinegar against synthetic acetic acid solutions and requires the raw material to be identified.
Manufacturing Process
Sorghum, and in some recipes barley, peas or maize, is cleaned, milled and steamed, then cooled and mixed with a koji or qu starter that supplies moulds, yeast and lactic acid bacteria. Amylases from the starter saccharify the starch while yeast ferments the sugars to ethanol, producing an alcoholic mash over about two weeks. Wheat bran and rice husk are then mixed in to make the mash porous, and acetic acid bacteria carry out a solid state acetic fermentation in open vessels, which is turned daily so that air reaches the whole bed and the temperature stays within range.
The acidified solid mash is salted to stop the fermentation, then subjected to the heat treatment that defines the style, in which the mash is held warm for several days so that Maillard reaction develops the dark colour and the smoky aroma. Vinegar is leached out of the mash with water in a countercurrent extraction, and the raw liquid is transferred to ceramic jars or tanks for ageing, where evaporation concentrates it and the acid, sugar and amino acid profile continues to change. Mature vinegar is settled, filtered, standardised to the target acidity, pasteurised and filled into bottles, drums or tankers, with the residual mash going to feed.
